| CINDY'S THREE-BEAN SOUP- <1 point My friend cindy brought this soup to work one night and told us that she was in a creative mood and wanted to come up with a good tasting, low points soup. I think she came up with a winner- this soup tastes great and is less than 1 point per cup. Thank you Cindy! 1 medium Vidalia onion, chopped 2 cloves garlic, finely minced or crushed 2 cups sliced carrots or baby carrots 3 stalks celery, sliced cooking spray 3 cans fat-free beef broth 1 beef bouillon cube 1 can 3-bean salad with liquid 1 (15 oz.) can whole peeled tomatoes, cut up, or 1 can kitchen ready tomatoes or crushed tomatoes 1 small to medium zucchini, cut in half lengthwise and sliced 1/2 bag shredded cole slaw mix 2 tbs. dried parsley salt and pepper to taste. |

| Spray a soup pot with cooking spray. Saute' the onions, garlic, carrots and celery until vegetables are softened, about 5 minutes. Add the remaining ingredients, bring to a boil then turn heat down to a simmer and let cook for 15 to 20 minutes, until vegetables are tender. Makes about 8 one-cup servings, <1 point each |
