GRILLED HONEY-MUSTARD CHICKEN- 8 points

     
1/2 cup honey
         2 tbs. chicken broth
         2 tbs. mustard
      1/2 tsp. grated lemon peel
         2 tsp. lemon juice
      1/4 tsp. salt
         1 broiler-fryer chicken (3 to 3 1/2 lbs.) cut up and skin removed

Heat coals or gas grill.  Mix together all ingredients except chicken.  Cover and grill chicken, bone sides down over medium heat for about 20 minutes.  Turn chicken.  Cover and grill 30 to 40 minutes longer, turning and brushing 2 or 3 times with the honey mixture, until the juices run clear.  Discard any remaining honey mixture.  This recipe makes 6 servings,
8 points each.
CHICKEN DIVAN- 6 points

       
  cooking spray
        1 large head broccoli, lightly steamed (about 4-5 minutes- don't overcook)
        3 skinless, boneless chicken breast halves, cooked and cut into pieces
        4 skinless, boneless chicken thighs, cooked and cut into pieces
        2 cans low-fat cream of chicken soup
     1/2 cup fat-free mayonnaise
        2 tsp. lemon juice
     1/2 tsp. curry powder (optional)
        6 oz. low-fat Swiss cheese, sliced or shredded
        1 small can French Fried onion rings

Preheat oven to 350 degrees F.   Spray a 9" X 13" baking pan with cooking spray.  Arrange the steamed broccoli in the baking pan.  Place the chicken pieces on top of the broccoli.   In a small bowl, combine the soup, mayonnaise, lemon juice and curry powder and pour over the chicken.  Add the sliced or shredded Swiss cheese over the soup mixture.  Sprinkle the onion rings over all.

Bake for about 30 minutes or until bubbly.  This recipe serves 8 and is
6 points/serving.
