| FRESH STRAWBERRY MUFFINS- 3 points 2 1/2 cups all-purpose flour 2/3 cup sugar 1 tsp. baking soda 3/4 tsp. ground cinnamon 1/2 tsp. salt 1 1/2 cups diced fresh strawberries 1 cup nonfat buttermilk 1/3 cup melted margarine 1 1/2 tsp. vanilla extract 1 egg plus 1 egg white, lightly beaten cooking spray 1 1/2 tbs. sugar Preheat oven to 350 degrees F. Combine flour,sugar, baking soda, cinnamon and salt in a large bowl and stir well. Add the fresh strawberries and mix in. Make a well in the center of the mixture. Combine the buttermilk, margarine, vanilla and eggs. Add to the dry ingredients and stir just until moistened. Divide the batter evenly among 18 muffin cups coated with cooking spray. Sprinkle 1 1/2 tbs. sugar evenly over the muffins. Bake for 25 minutes or until a toothpick inserted in the center comes out clean. Remove from pans immediately and let cool on a wire rack. This recipe makes 18 muffins/ 3 points each. |
