| MEATLOAF- 3 points 1 can (6 oz.) tomato paste 1/2 cup dry red wine 1/2 cup water 2 garlic cloves, crushed 1 tsp. dried basil leaves 1 tsp. dried oregano leaves 1/2 tsp. salt 12 oz. lean ground round 12 oz. lean ground turkey breast 2 slices whole wheat bread, remove crusts and break into crumbs 1/2 cup shredded zucchini 1/4 cup egg substitute Preheat oven to 350 degrees F. Combine the tomato paste, wine, water, garlic, basil, oregano and salt in a small saucepan. Bring to a boil, reduce heat and simmer, uncovered, 15 minutes. Set aside. Combine the ground round, ground turkey, bread crumbs, zucchini, egg substitute and 1/2 cup of the reserved tomato mixture in a large bowl. Mix well. Place the meat mixture in a 9X5X3-inch loaf pan. Bake 45 minutes. Discard any drippings. Pour the remaining tomato sauce over the top of the loaf. Bake for another 15 minutes. Let sit 10 minutes before slicing. Makes 8 servings, 3 points each. |
