Russian tea-drinking with fruits

Tea Foam

Beat the white of 1 egg with '1/4 cup of sugar, add 2 egg yolks and a squeeze of a half of a lemon, pour into 2 cups of hot strained tea, whip until a dense foam and pour into heated vessels.

Apricot Tea

Pour 1 cup of strong tea over 1 tablespoon of apricot or peach syrup and 1 tablespoon of milk and cool.

Tea with Egg Yolk

Rub 1 egg yolk with 2 tablespoons of fruit syrup, add 1 cup of tea and ice and beat well. These hot and cold teas are served with fruits, for dessert .
