T.T.'s Classic Cyber-Sauce Recipe

Ingredients:

1 Spanish Onion, diced

1 Clove Garlic, thinly Sliced

4 ounces Olive Oil

4 - 28 ounce cans Crushed Tomatoes

Salt - Pepper - Oregano - Basil - Parsley to Taste

Procedure:

Saute the onion and garlic in the olive oil over medium heat until translucent but not browned (about 10 minutes). Add the tomatoes and bring to a boil. Lower the heat to just bubbling and continue cooking stirring occasionally for 30 minutes. Add the salt, pepper, oregano, parsley, and, basil to taste.

Serve over hot pasta and enjoy!!

T.T.'s Broccoli Rabe

Ingredients:

1 - 3 Cloves Garlic, thinly Sliced

1/4 Cup Olive Oil

4 cups water

Salt to Taste

1 Large bunch broccoli rabe cleaned & cut in half

Procedure:

Saute the garlic in the olive oil over medium heat. Add broccoli rabe and 4 cups water. Simmer until tender. Add salt to taste - pepper optional.

Serve over hot pasta and enjoy!!

Serve with crusty Italian bread

T.T.'s Braciola

Ingredients:

1 package top round braciola meat - two pieces

2 eggs - hard boiled

Salt, pepper, parsley

Procedure:

Hard boil the two eggs and allow to cool. Pound the meat until thin and season with the salt, pepper, and, parsley. Place the egg in the meat and roll producing an "egg in the blanket." Wrap the braciola with cotton thread and place in the sauce to cook.
