Fried Garlic Beef

Ingredients:
  • 0.75 lb beef
  • 2 cloves mashed garlic
  • 1 shallot
  • 1 tbsp ginger juice
  • 1 red chilli
  • 1.333 oz rice vermicelli
  • 1 tsp Shaoxing wine

    Seasoning:
  • 1 tbsp seasoning sauce
  • 1 tsp cornflour
  • 1 tbsp cooked oil
  • 1 tbsp egg white
  • 2 tbsp water

    Sauce:
  • 1 tsp seasoning sauce
  • 0.5 tsp cornflour
  • 0.25 tsp sugar
  • dash of sesame oil
  • 2 tbsp water
  • Method:
    1. Thinly slice beef. Marinate with seasoning for 20 minutes. Dice shallot and red chilli.
    2. Deep fry rice vermicelli until crispy. Drain well.
    3. Saute beef in warm oil. Drain well.
    4. Saute mashed garlic, shallot and red chilli with 0.5 tbsp oil. Put in sliced beef.
    Add sauce slowly. Stir well, then sprinkle with wine. Dish up. Place crispy rice
    vermicelli around cooked beef and serve.
