Fried Beancurd Balls

Ingredients:
  • 2 beancurds
  • 5 oz shrimps
  • 1 egg
  • 0.75 lb Shanghai brassica
  • 0.5 tsp mashed garlic

    Seasoning:
  • 0.5 tsp salt
  • dash of pepper
  • 2 tbsp cornflour

    Sauce:
  • 1 tbsp oyster sauce
  • 1 tsp dark soy
  • 1 tsp light soy
  • 0.5 tsp sugar
  • 1 tsp cornflour
  • 2 tbsp water
  • Method:
    1. Wash, pat dry and mash beancurd. Mix with seasoning. Whisk egg and mix well.
    2. Clean, pat dry and dice shrimps. Stir in the mixture. Mix together.
    3. Clean and section Shanghai brassica. Blanch with salt and oil till cooked for
    garnishing.
    4. Individually spoon beancurd mixture into hot oil to deep fry till slightly brown.
    Dish up. Saute mashed garlic with 0.5 tbsp oil. Add sauce. Stir in beancurd balls.
    Dish up and serve.
