Stir Fried Shredded Squid With Chives

Ingredients:
  • 8 oz chives
  • 1 fresh squid
  • 1 oz wood's ear
  • few slices carrot (cut into flower-like pieces)
  • 1 clove mashed garlic

    Sauce:
  • 1 tbsp light soy
  • 0.25 tsp salt
  • 0.5 tsp sugar
  • 1 tsp cornflour
  • 2 tbsp water
  • Method:
    1. Wash and remove end section from chives. Then cut into 1.5" long sections.
    2. Remove membrane from squid. Dry and shred. Marinate with pinch of salt and dash
    of cornflour for 15 minutes. Blanch and drain well. Soak and shred wood's ear.
    Shred ginger.
    3. Stir fry chives, wood's ear and carrot with 1 tbsp oil. Add ginger shreds, mashed garlic
    and squid. Sprinkle with wine. Stir in sauce. Fry till cooked. Dish up and serve.
