Steamed San-Yu
Ingredients:
1 san-yu
1 slice dried tangerine peel
2 slices ginger
4 talks spring onion
Seasoning for fish:
pinch of pepper
1 tsp wine
2 tsp cornflour
Method:
1.
Scale and clean fish. Blanch in boiled water. Then chill in cold water.
Drain and wipe dry. Apply seasoning all over fish. Place on dish.

Soak, clean and shred tangerine peel. Sprinkle fish. Boil water, steam fish for
10 minutes over high heat.
3.
Thinly shred ginger. Section and shred spring onion.
4.
Discard water in dish. Saute ginger and spring onion with 2 tbsp oil. Pour over fish.
Add light soy to season. Serve hot.
