Burger of the Gods
8 ounces chuck, trimmed, cut into 1 1/2-inch cubes
8 ounces sirloin, trimmed, cut into 1 1/2-inch cubes
1/2 teaspoon kosher salt
In separate batches, pulse the chuck and the sirloin in a food processor 10
times. Combine the chuck, sirloin, and kosher salt in a large bowl. Form the
meat into 5-ounce patties.
Heat a cast iron skillet or griddle over medium-high heat for 2 to 3 minutes.
Place the hamburger patties in the pan. For medium-rare burgers, cook the
patties for 4 minutes on each side. For medium burgers, cook the patties for 5
minutes on each side. Flip the burgers only once during cooking.
Yield: 3 servings
MANHATTAN BURGERS
1 lb. ground beef
1/4 cup pizza sauce
2 Tbsp. mushrooms, chopped
3 Tbsp. pepperoni, chopped
Italian bread; toasted
4 slices Mozzarella or provolone cheese
1/4 cup pepperoni, sliced
8 green pepper rings
Add pizza sauce, chopped mushrooms and chopped pepperoni to ground beef. Mix
well. Shape into 4 patties. Grill (or broil) to desired doneness. Place
cooked burgers on Italian bread slice. Top with a slice of cheese, some
sliced pepperoni and 2 green pepper rings each.
Star-Spangled Cheeseburgers
Prep Time: 10 minutes
Cook Time: 20 minutes
2 pounds 80% lean ground beef
salt
pepper
BBQ ketchup spread or honey-mustard spread - recipes below
8 slices (approximately 1 ounce each) American cheese
8 hamburger buns, split
Romaine lettuce
Tomato slices
Seasoning:
BBQ ketchup spread: In a small bowl, combine 1/4 cup ketchup and 2 tablespoons
prepared barbecue sauce. Makes approximately 1/3 cup.
Honey-mustard spread: In a small bowl, combine 1/4 cup mayonnaise and 1/4 cup
prepared honey mustard. Makes approximately 1/2 cup.
1. Shape ground beef into eight 1/2-inch-thick patties.
2. Place patties on grid over medium, ash-covered coals. Grill, uncovered, 11
to 13 minutes to medium doneness (160 degrees) or until centers are no longer
pink and juices show no pink color; turn once. Season with salt and pepper, as
desired.
3. Meanwhile prepare BBQ ketchup sauce or honey-mustard spread. Cut shapes
from cheese slices, using star-shaped cookie cutter.
4. Approximately 1 minute before burgers are done, place cheese stars on top
of burgers.
5. Spread cut surfaces of buns with desired spread. Place lettuce and tomato
on bottom of each bun, as desired. Top with burger. Close sandwiches. Makes 8
servings (serving size: 1 sandwich).
Italian-Stuffed Burgers
Prep Time: 10 minutes
Cook Time: 40 minutes
1 1/2 pounds 80% lean ground beef
1/2 cup (2 ounces) shredded mozzarella cheese
1 can (4 1/4 ounces) chopped pitted ripe olives
1/4 cup finely chopped onion
salt
4 crusty rolls or hamburger buns, split, toasted
4 large tomato slices
optional toppings: prepared pizza sauce, mayonnaise, thinly sliced lettuce
Seasoning:
1 tablespoon Italian seasoning, crushed
1 1/2 teaspoons garlic powder
1/2 teaspoon pepper
1. In small bowl, combine cheese, olives, and onion. Shape ground beef into
eight patties, approximately 4 1/2-inch diameter. Place approximately 1/4 cup
of cheese mixture in center of four patties; top with remaining patties. Press
edges firmly together to seal; gently pat to 3/4-inch thickness.
2. In small bowl, combine seasoning ingredients. Press evently into both sides
of each patty.
3. Place patties on grid over medium, ash-covered coals. Grill, uncovered, 22
to 24 minutes to medium doneness (160 degrees) or until centers of patties are
no longer pink and juices show no pink color; turn occasionally.
4. Season burgers with salt, as desired. Line bottom of each roll with one
tomato slice; top with burger. Add choice of toppings, if desired. Close
sandwiches. Makes 4 servings (serving size: 1 sandwich).
Ranch Burgers
Prep Time: 5 minutes
Cook Time: 15 minutes
1 1/2 pounds 80% lean ground beef
4 teaspoons Spicy Seasoning Mix (recipe below)
4 egg-bread hamburger buns, split
Romaine lettuce
Tomato slices
1/4 cup prepared creamy ranch dressing
2 tablespoons canned French fried onions
Seasoning:
Spicy Seasoning Mix:
Combine 2 teaspoons sweet paprika, 2 teaspoons dried thyme leaves, crushed, 1
1/2 teaspoons salt, 1 teaspoon garlic powder, 1 teaspoon onion powder, 1/2
teaspoon ground black pepper, 1/2 teaspoon ground red pepper and 1/2 teaspoon
ground white pepper. Store in airtight container. Shake before using to blend.
Makes 3 tablespoons.

2. Shape ground beef into four 3/4-inch-thick patties. Press Spicy Seasoning
Mix evenly into both sides of each patty.
3. Heat large heavy nonstick skillet 5 minutes over medium heat until hot. Add
patties to skillet. Cook 12 to 15 minutes to medium doneness (160 degrees) or
until centers are no longer pink and juices show no pink color; turn once.
4. Line bottom of each bun with lettuce and tomato; top with burger. Spoon
ranch dressing evenly over burgers; sprinkle with onions. Close sandwiches.
Makes 4 servings (serving size: 1 sandwich).
