Broccoli yoghurt salad

Ingredients

Broccoli-400g
Yoghurt-400g
Olive oil-2 tbsp
Sugar-1 tsp
Lemon juice-2 tbsp
Salt to taste
freshly ground black pepper to taste
a few sprigs of mint leaves to garnish

Method

1. Cut broccoli into florets and blanch in salted water. Quickly cool them in chilled water and drain them well. Keep them in refrigerator.

2. Whisk yoghurt, sugar, olive oil, black pepper, lemon juice and salt together. Check seasoning.

3. Toss the blanched, drained broccoli in yoghurt dressing and serve garnished with sprigs of mint.
