Baked cauliflower masala

Ingredients

Cauliflower- 1 (medium size)
Green peas-1/2 cup
Cashewnuts-2 tbsp
Raisins-1 tbsp
Ghee- 2 tbsp
Coriander leaves-2 tbsp (chopped)

For marinating cauliflower:-

Chilli powder- 1 tsp
Ginger-garlic paste-1/2 tp
Garam masala powder-1/4 tsp
Curd-2 tbsp
Juice of half lime
Oil-2 tbsp
Salt to taste

For masala:-

Onion-3(250 g)
Coriander powder-1 tbsp
Chilli powder-1 tsp
Cumin powder-1/2 tsp
Turmeric powder-1/2 tsp
Aniseed powder-1/2 tsp
Ginger-garlic paste-1/2 tsp
Tomato puree-1/2 cup
Salt to taste
Garam masala-powder-1/2 tsp
Oil-1/2 cup

Method

1.Cut cauliflower into florets.

2.Mix the ingredients for marination & marinate the florets in it for 30 min.

3.Steam the florets for 15 min.

4.Cook the green peas in salted water till � done.

5.Grease a baking dish with ghee. Put the steamed cauliflower & cooked peas in it, (reserving few green peas for garnish). Bake in hot oven for 30 min(180 deg C).

6.Fry cashew nut and raisins in ghee.

7.Slice 2 onions finely & fry them in hot oil till golden brown in colour. Remove & keep it aside.

8.In the remaining oil saut� 1 chopped onion. When it becomes soft, add ginger-garlic paste. Saut� for few minutes. Then add  coriander , chilli , turmeric, cumin & aniseed powders. Saut� till raw smell disappears.

9.Add tomato puree, salt & � cup of water. Cook till oil separates out.

10.Crush � of  the fried onions & add to the gravy.

11.Pour the gravy over the baked cauliflower, sprinkle garam masala powder & put it back to oven. Bake till it becomes dark brown in colour.

12.Garnish with  remaining fried onions, cashew nuts, raisins,coriander leaves & green peas. Serve hot with parathas.
