Baked brinjal masala

Ingredients

Brinjals- 4
Onion, chopped- 2
Ginger-garlic paste- 2tsp
Red chili pd- 1 tsp
Turmeric pd-1/4 tsp
Coriander pd- 1 tsp
Cumin pd- � tsp
Garam masala- � tsp
Tomato sauce 1 tbsp
Curd- 1cup
Coriander leaves- � cup
Salt to taste
Sugar- � tsp
Oil for frying


Method

1 Cut brinjal into thin slices & soak in salted water for 10 min. Drain & wipe them dry. Fry in hot oil until light golden color. Arrange these fried slices in a baking dish.
2. Heat 2 tbsp of oil and saut� chopped onion lightly.
3. Add ginger- garlic paste and saut� until raw smell disappears.
4. Add all masala powders & saut� for few more seconds. Spread this on top of the brinjal.
5. Mix tomato sauce, sugar and salt with the curd and pour on top of the brinjal.
6. Bake the brinjal masala at 150 degree C for 30 min, until brown and semi-dry.
7. Serve garnished with chopped coriander leaves.
