Chicken biriyani

Ingredients

Chicken-1 medium
Basmati rice- 1/2 kg
Curd-1 1/2 cup
Ginger-garlic paste-1 tbsp
Red chilli pd- 1 tsp
Garam masala pd-1/2 tbsp
Whole garam masala-1 tsp
Onion-3 cups (sliced)
Turmeric pd-1/4 tsp
Coriander pd-2 tbsp
Green chillies-3 or 4 (according to taste)
Tomato-2 cups (chopped)
Coriander leaves- a small bunch
Mint leaves- a small bunch
Ghee-1/2 cup
Milk-1/2 cup
Saffron- a pinch
Rose water-a few drops
Salt- to taste
Lemon juice-3 tbsp

Method

1.Marinate chicken pieces with ginger-garlic paste, red chilli pd, salt, garam masala pd & curd. Keep it aside for 30 min.
2.In a pan heat ghee & fry 1 cup of sliced onions till golden brown in colour.Drain & keep aside.To this fried onion, add little chopped coriander & mint leaves along with little garam masala pd.
3.Now fry the remaining onion slices in the same ghee till its changes colour. To this add marinated chicken along with the marinade.Fry well till oil leaves the sides of the pan.
4.Then add turmeric pd,dhania powder,green chillies ,tomato & salt.Cook covered, till chicken pieces are tender & the gravy  becomes thick.
5.Now add chopped coriander leaves, mint leaves & garam masala pd.
6.Wash & soak the rice in water for 30 min.Boil enough quantity of water to cook the rice.Then add salt, whole masala, lemon juice & rice.Cook till rice is half done.Drain the rice in a colander & keep aside.
7.Crush saffron in milk.
8.To layer the biriyani, take a well greased baking dish. First spread the chicken layer.Now spread little fried onion mixture.Then put a layer of rice.Again spread fried onion mixture.Then put the remaining rice over it.Pour the saffron milk & sprinkle little rose water.Spread remaining fried onion mixture.Put few drops of ghee over it.Cover tightly & bake in a preheated oven for 15 min at 150 Degree C.
