Malabar prawn curry


Ingredients

Prawn- 100g
Mustard seeds- � tsp
Dry red chilli- 1
Shallots, sliced-50 g
Curry leaves- a few sprigs
Green chilli-2
Red chilli pd- 2tsp
Turmeric pd- � tsp
Coriander pd-1 tsp
Coconut milk-200 ml
Kokum- 2 or 3
Salt to taste
Ginger juliens- 1 tbsp
Coconut oil- 3 tbsp

Method

1. Heat coconut oil in a pan. Add mustard seed and when they splutter add dry red chilli and curry leaves.
2. Add sliced shallots, ginger juliens and slit green chillies. Fry till onions are translucent
3. Make a paste of powdered masalas in water and add to shallots. Fry for few seconds till raw smell disappears.
4.Add second extract of coconut milk. When it boil add kokum, salt and prawns. Cook on slow fire till prawns are done.
5. Take the pan off the fire and add thick extract of coconut milk.
6. Heat 2 tbsp of coconut oil in another pan. Add a tbsp of sliced shallots and some curry leaves. Temper the prawn curry with this mixture.
