Pina colada mousse

Ingredients

Pineapple (stewed)-1 cup
Egg -3
Sugar (powdered)-1/2 cup
Gelatine-3 tbsp
Coconut milk-1 cup
Fresh cream-1/2 cup
Pineapple juice-1/2 cup


Method


1.Dissolve gelatine in 3 tbsp of water.
2.Separate egg yolks from white.
3.Beat egg yolks with sugar, over a hot water bath until it becomes thick.
4.Add melted gelatine, coconut milk & pineapple juice. Cool to room temperature.
5.Prepare a small glass tumblers by arranging a layer of stewed pineapple on the bottom.
6.Whip cream till light & fluffy. Add this to coconut milk  custard.
7.Beat egg white till stiff & fold into the above mixture. Pour into prepared glass tumblers & allow it to set.
8.Decorate with pineapple pieces & whipped cream.
