Lacy-Daisy Cake

Ingredients

For the cake: -

Milk-1 cup.
Butter-4 tbsp (salted)
Eggs-4.
Powdered sugar- 2-1/2 cups.
Flour-2 cups.
Baking powder-2-1/2 tsp.
Vanilla essence-1/4 tsp.

For the crust: -

Demerara sugar (brown sugar)-1-1/4 cups.
Butter-3 tbsp.
Thick cream-8 tbsp.
Fresh grated coconut-1-1/2 cups.
Cashew nut-1/4 cup
Raisins-1/4 cup.

Method

For the cake:

1.Grease & line a square-baking dish of 9 inch by 9 inch.
2. Warm the milk & add butter. Keep aside.
3. Sieve flour & baking powder together (three times).
4. Sieve the powdered sugar.
5. Beat the egg & sugar till light & creamy over a pan containing hot water.
6.Add sieved flour & milk-butter mixture little by little, alternatively to the egg mixture. Add vanilla essence and pour into the greased baking dish.
7.Bake in a moderate oven at 180 degree centigrade for 45 min or till done.
8.Cool & transfer to a large tray.

For the crust:

Mix all the ingredients for the topping & spread over the cooled cake. Grill it in the oven for 10min or till the crust is crisp & brown.
