Mango cheese cake

Ingredients

For the base:-

Digestive biscuits-200 g
Unsalted butter-75 g

For the filling:-

Egg yolk-4
Sugar, powdered- 250 g
Gelatin-30 g (approx..6 tsp)
Cream cheese (or hung curd)-250 g
Mango pulp- 350 ml
Fresh cream-200g

Method

1.
For the base: - Crush biscuit and add melted butter. Spread this mixture on a 8�spring form pan. Bake at 150 Degree C for 10 min. refrigerate.
2. Cook egg yolk and powdered sugar together over a double boiler, while constantly beating them up until thick & creamy.
3. Melt gelatin in � cup of  water and mix into cooked yolk mixture. Cool to room temp.
4. Fold in beaten cream cheese, mango pulp & whipped cream.
5. Pour over the biscuit base & refrigerate till set.
6. Decorate with mango wedges and serve.
