| Jamaican pineapple gateau Ingredients For the cake: - Egg -6 Flour-170 g Baking powder-1 tsp Powdered sugar-170 g Vanilla essence-1/2 tsp Hot water-4 tbsp Melted butter-2 tbsp For the filling: - Butter-100 g Pineapple slices-1 tin Condensed milk- � tin Powdered sugar-300g Method For the cake: - 1. Beat egg whites stiff & add yolk one by one. Beat well. Sprinkle the sugar & beat till thick. 2. Add essence & melted butter. Fold in sieved flour & baking powder. Add hot water. Pour in greased tray & bake for 15 min at 180 deg C. For the filling: - 1.Beat butter well, add condensed milk & beat well adding little syrup to the spreading consistency. For assembling: - 1. Cut the cake horizontally into two. Soak both the pieces in pineapple syrup. 2. Keep one layer in a plate & spread with half the filling. Put chopped pineapple pieces over it. Then place the other cake over it & cover with the remaining mixture over it. Decorate with pineapple wedges, cherries & praline. |
