If you missed any GF on your way through the game, you can get them during Disc Four at Ultimecia's Castle. After defeating Sphinxaur, choose to unlock the Draw ability. You can then draw the following GFs from the corresponding bosses.
Other Guardian Forces
Odin:
You must search out Odin's lair inside the Centra Ruins and defeat him if you want him to join your cause. Odin is not a controllable GF. Once he joins you once he joins you he'll randomly appear about every 1 of 10 battles, but not on bosses. Odin uses his sword Zantetsuken to cut any enemy in two. This helps out a lot when you fight Malboros, but if you're trying to get everything the game offers, it is sort of an annoyance.
Phoenix:
You can only summon Phoenix by using a Phoenix Pinion during a battle. When Phoenix appears, it revives any KOed characters and restores some of their HP. Once summoned, it may have a random chance of coming to your aid again when your party is in trouble.
Boko the Chocobo:
You can summon the Chocobo once again to help aid you in battle. After solving one of the Chocobo Forest puzzles, you'll receive the Gyshal Greens that will allow you to summon the Chocobo.
MiniMog:
You must obtain the Mog's Amulet item and teach a GF the MiniMog ability. This will restore all of your GFs HP. But the cost is 100 Gil times your character's average level.
Moomba:
You need to obtain the Friendship item to summon the Moomba
Gilgamesh:
Near the end of Disc Three, Gilgamesh will take Odin's place. They're both similar but Gilgamesh will come during boss fights too. He has four different attacks:
Zantetsuken - Cuts all enemies in half, resulting in death
Masamune - Extremely strong attack against all enemies
Excaliber - Strong attack against all enemies
Excalipoor - Causes 1 point of damage to all enemies
