fresh vermicelli bowl
   vietnamese: bun

1. put in a bowl:

     
rice vermicelli, soaked in hot water till soft then rinsed in cool water and drained

2. choose from the following ingredients (whatever's convenient...don't try to put all these things in the same bowl of vermicelli!) and place them on top of the noodles:

     
fried tofu, sliced into strips or thin triangles
      thin
spring rolls, fried and chopped into bite-sized lengths
      thin
fresh spring rolls, chopped into bite-sized lengths
      boston or romaine lettuce, chopped or shredded
      cucumber, sliced or julienned
      roasted vegetables of your choice
     
carrot and daikon relish, strained; or just use fresh julienned carrot & daikon
      fresh
mint leaves and any other fresh vietnamese herbs
     
coriander/cilantro
     
bean sprouts, raw or slightly boiled
      roasted peanuts, crushed
      scallions, chopped
     
chili peppers
      anything else you think would taste good!

3. serve with:

      a small bowl of
nuoc cham, which you can mix into the vermicelli before eating

- another way to serve fresh vermicelli is to put the vermicelli on one plate, put the herbs and lettuce on another plate, and put spring rolls or tofu on another plate, and give each person a bowl of mild
nuoc cham.  each person takes whatever they want from the plates, and dunks it in their own bowls of nuoc cham before eating.
