| CHINESE KITCHEN PANTRY You don�t have to live near a Chinatown to stock up on the basic essentials. Most of these items can be purchased at a large grocery store. For those that don�t have access to a nearby Chinatown or can�t find the items at a grocery store, there is always the internet. Try http://www.orientalpantry.com The following are the basic items that appear in most of the dim sum recipes along with a few that are used in other Chinese recipes. Light soy sauce Dark soy sauce Chicken broth (homemade is best but canned works in a pinch) Canola or peanut oil Toasted sesame oil (for flavor, never for cooking!) Cornstarch All-purpose flour White and black pepper Chinese five-spice powder Oyster sauce Hoisin sauce Hot chili paste Fermented black beans (avoid the salty bottled black bean sauces) Shiitake dried mushrooms Assortment of dry noodles, e.g., bean threads, rice vermicelli Long-grain rice Rice wine or dry sherry Rice vinegar Garlic Ginger root Scallions (also called green onion or spring onion) Potsticker wrappers Fresh noodles Wonton wrappers |
