So you want some Great Recipes do ya?
Well, Dan hasn't exactly been shirking in this area! In fact, after experiencin' some o' these Recipes Dan has created or collected, you'll be findin' out just how classy this Dan guy really is!


Chicken Caccitori (for 6 servings) Freeze meal-size portions!
2-3 small Zucchini (2 cups) sliced
2 Green Peppers, chopped in 3/4-inch squares
3 Chicken Breasts, cubed
6 Chicken Thighs, skinless
1 large Spanish Onion, julienne cut
1 Red Hot Pepper, chopped in 1/4-inch squares
4 cups medium, Low Fat Salsa (I use one 850 ml bottle of Low-Cal Extra Chunky Mild Salsa and a 660 ml bottle of ARRABBIATA)
1 tin Tomato Paste
3 cloves Garlic, minced
3 stalks Celery, diagonally sliced
3 tbsp. Olive Oil
2 cups (2 tins) Button Mushrooms (and the juice or 1 cup water)
2 tbsp. (or 4 tbsp. fresh) Dill Weed
1 tsp. Basil
1 tbsp. (or 2 tbsp. fresh) Oregano
pinch of Salt, fresh ground Pepper
Preheat oven to 375 F. Add everything into a large pot and stir to mix well with your hands. Pour into oval casseroles or large lasagna dishes. Cover with a lid or foil and put into oven at middle level. Cook for 45 minutes. Remove lids/foil. Cook for an additional 1/2 hour at 350 F.
Serve over brown rice, pasta shells, or by itself with a vegetable and salad!

Quaker Low Fat Carrot Muffins (mix makes 12) These can be frozen too!
1/2 of Mix Package
1 cup and 2 tbsp. Water
1 cup Blueberries
4 Peach slices (optional) or 6 Pineapple cubes (optional), chopped in small chunks
1 whipped Egg
(optional) 1 scoop NHF Ultra Whey More XP (Protein Powder)
"Too Good To Be True" Cooking Spray
Preheat oven to 350 F. Mix everything into a bowl. Spray muffin tin with Cooking Spray. Spoon mix into muffin tin evenly (about 2/3 full in each). Place on middle rack. Check after 18 minutes. Allow to completely cool before removing from tin.

Garlic Chicken, Mini-Scallops & Cauliflower on Pita (or Wrap
)
2 cups Cauliflower Florets
2 large Garlic Cloves
1 tbsp. Olive Oil
2 oz (1/3 roasted, sliced/shaved fine) Chicken Breast
6 oz Mini-Scallops
1/2 cup Fresh Parsley
Nuke Cauliflower Florets 5 minutes. Meanwhile, rub bottom of frying pan with 1 clove Garlic. Add Olive Oil to pan on medium-high heat. Mince all remaining Garlic and mash some of it between 2 spoons. Add it to the pan. Add well-drained Mini-Scallops, stir. Add nuked Cauliflower, stir. Nuke Pita with Fresh Parsley inside for 25 seconds. Stir & drain off oil from pan mixture. Add Chicken Breast to hot pan mixture, stir. Add to Pita. Roll Pita in a sheet of waxed paper. Twist ends. Roll paper down from top to eat. Enjoy!
