ROLLED SUGAR COOKIE (my favorite)

2 cups white sugar                          1 tsp soda
1 cup shortening                             1/4 tsp. salt
3 eggs                                             1 tsp vanilla
1 cup sour milk* or buttermilk      4 tsp. baking powder

Mix soda in buttermilk or sour milk.  Use enough flour to make it stiff enough to roll.  Cut out and place on baking
sheet.  Sprinkle with sugar.  Bake at 350 for 20 minutes.

*To sour milk, put in 1 tablespoon of lemon juice or vinegar to 1 cup of milk.
     

DROP SUGAR COOKIE

2 cups sugar                              1 tsp. soda
1 cup shortening or butter         1 tsp. cream of tartar
3 eggs                                        1/2 tsp. baking powder
1 cup milk                                  4 cups flour
2 tsp. vanilla

Cream together sugar and shortening.  Add eggs.  Stir soda into milk and set aside.  Blend in dry ingredients and milk and vanilla.  Drop by teaspoonful onto greased baking sheet.  Bake at  400 for 8 minutes.
EVER WONDER WHAT TO DO WHEN A RECIPE CALLS FOR AN INGREDIENT AND YOU DON'T HAVE IT.  HERE ARE SOME SUBSITUTES:

3 OR 4 TABLESPOOONS OF COCOA + 1 TABLESPOON OF BUTTER IS THE SAME AS  1 OZ. SQUARE OF CHOCOLATE

1 CUP OF GRANULATED SUGAR PLUS 1 TSP. CORNSTARCH, THE SAME AS =  1 CUP OF POWDERED SUGAR.

10 MINI MARSHMALLOWS THE SAME AS = 1 LARGE MARSHMALLOW
EVER HAVE THE SUGAR COOKIES GET DRY WHILE STORING THEM?
PLACE A SLICE OF BREAD IN WITH THEM AND THEY WILL SOFTEN UP.
PEANUT BLOSSOMS (kids love this one)

1 and 3/4 cups sifted flour (I never sift)
1 tsp. soda
1/2 tsp. salt
1/2 cup shortening
1/2 cup peanut butter
1/2 cup sugar
1/2 cup brown sugar (firmly packed)
1 egg, unbeaten
2 tablespooons milk
1 tsp. vanilla

Mix shortening and sugar, add peanut butter.  Gradually blend in the dry ingredients and mix well.  Shape by rounded teaspoonsful into balls.   Place on ungreased cookie sheet, bake at 375 for
8 minutes.
Remove from oven and place a solid (unwrapped)  chocolate candy kiss on top of teach cookie, pressing down gently so that cookie cracks around the edge.  Return to oven and back
2 to 5 minutes longer.  Yield 3 dozen.  (Better hide these until Christmas or make two batches) ummmmmmm. (this is exactly how the recipes is printed in my cookbook).
CRANBERRY-ORANGE SALAD

This is cranberry sauce with a delightful twist.

one 3 oz. pkg. of lemon jello
one cup of boiling water
one cup of orange juice (just reg. orange juice)
16 oz. of cranberry-orange relish - for some reason this is not packaged and sold in jars anymore.  I get mine at the supermarket deli, they usually have it for the holidays.
one unpeeled apple chopped
1/2 cup of chopped pecans (we prefer walnuts)

Disolve jello in boiling water, add orange juice and let stand in fridge till almost chilled (I keep checking it and when it starts to set I take it out and add the cranbery-orange  relish, apple and nuts.  I pour it into a 1 quart mold, or you can use a baking dish  or a pretty bowl or whatever.  Put in fridge until completely set and serve with your christmas dinner or anytime.   Enjoy.

COOKIE SHEET CAKE

2 sticks of margarine (softened)
4 eggs
1 and 1/2 cups of sugar
1 can of cherry pie filling (our favorite)) or apple, (haven't tried the apple), or any other kind, I did try the blueberry, did not like it as well as the cherry.

BEAT THE ABOVE INGREDIENTS WELL

Add:
2 cups flour (plain)
1 tsp vanilla

Grease and flour large cookie sheet with sides, I use my jelly roll pan, DO NOT USE A FLAT COOKIE SHEET,
Spread batter in pan, section batter into squares, put a spoonful of pie filling in each sqared, if using cherry try to get at least 3 cherries in each square, sprinkle powdered sugar over top.
Bake at 350 for 30-35 minutes, (oven temps may vary)
Cool and cut into sqares.  (I sprinkle a little more powdered sugar on it after it cools a bit)
This is a easy dessert to transport and it is sooooooo good.

RAISIN PUFFS

1 cup dark seeedless raisins
1/2 cup golden raisins
1 cup water
1 cup shortening
1 and 1/2 cups sugar
2 eggs, slightly beaten
2 and 1/2 cups sifted flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon vanilla

Cook raisins in water over moderate heart until all the water is absorbed.   Set aside to cool.   Cream shortening, sugar and eggs until fluffy.  Sift flour with soda and salt.   Add to creamed mixture with raisins and vanilla.    Mix well.
Shap into small balls and roll in granulated sugar.   Bake on greased baking sheet at 350 for 15 minutes.
Very good, enjoy.
