COCONUT CREAM CAKE

Crust:  2 cups flour, 2 tsp. sugar and 1 cup melted margarine- mix and pat onto a cookie sheet, prick with fork   Baked about 15 minutes or until slightly brown.  I use my jelly roll pan.

Topping:  1 (8 oz.) cream cheese, 1 cup powdered sugar and 1 (8 oz.) container of cool whip - mix and spread  on  crust.

Then top with:  3 pkgs coconut pudding (instant) and 5 cups of milk, mix together and put on cream cheese layer, put another 8 oz. container of cool whip on top and sprinkle with coconut or nuts, if desired.  Keep refrigerated.
PRETZEL DESSERT (a family favorite)

1/2 lbs. of  pretzels, (put in bag and roll your rolling pin over them)
1 and 1/2 sticks maragarine
1 (8 oz.) cream cheese
1 cup sugar
2 env. Dream Whip topping
1 can cherry pie filling

Mix rolled pretzel sticks, margarine (melted) together and pat into a 9 x 13 inch pan.  Bake for 10 minutes at 350.  Let cool.  For the filling, mix the cream cheese and sugar, set aside.  Mix the Dream Whip according to directions, until stiff, add this to the cheese mixture and mix well.  Spread on pretzel  layer.  Spread 1 large can of cherry pie filling over this and refrigerate.   This dish is always requested at family gatherings.

BEST MERINQUE (this is the best tasting merinque I have found)
2 tablespoon
sugar, 1 tablespoon cornstarch 1/2 cup water, cook, stirring unti thick and clear. cool  In separate bowl beat:

egg whites, 1/8 teaspoon salt, 1/2 teaspoon vanilla, beat until soft peaks form, add:
5 tablespoons
sugar gradually, then beat until stiff and glossy.  Add cool cornstartch mixture, continue beating until stiff.  Pile on top of pie filling, sealng edges.  Bake until merinque is lightly brown, 10 to 15 minutes, 350 degrees.
Ever wonder how to make homemade applesauce?  It's easy and kids love it, (so do adults)
Pare 4 or 5 large apples, (any kind will do, but Macintosh is best for cooking)
Slice apples, place in microwave safe dish with lid, I use a glass casserole dish)
Cook for 4 minutes, check, if not cooked add another 2 minutes. (add a little water, not much)
Remove from dish with a slotted spoon, (some apples get too watery.
Place apples in blender, hit blend, (this is a preference, I like my applesauce smooth, some like it chunky, adjust to your preference.
Also, the amount of sugar to add depends on your taste and the brand of apples.  Mac's tend to be a little sour so I add about 4 Tablespoons of sugar, and it that's not enough you can always add more when you serve it..
Place in bowl, and when it's cooled put in cinnamon.  Serve or if you want to freeze in just place it in freezer bags or containers, omit the cinnamon it can be added when you serve it in the future.

3 OZ. CREAM CHEESE
SMALL CAN OF SHRIMP (DRAINED AND RINSED WITH WINE, BEER OR LEMON JUICE.
1 TSP. LEMON JUICE
1 STICK OF BUTTER (OR 1/2 STICK, DEPENDS ON YOUR PREFERENCE)

BLEND WITH MIXER, SHAPE INTO BALL, POUR COCKTAIL SAUCE OVER IT.
