3 steps you shouldn't skip (and why)

1.) Lemon meringue pie:
Cool at room temp. before refridgerating, if pie is chilled too rapidly, the meringue shrinks away from crust, could also cause pie to sweat and cause brown spots and stickiness.

2.)Stews:
Brown meat without crowding,  just a few pieces at a time, if you put too much meat in the pan at once, the large volume will cause the pan and fat to cool. At the lowered temp. the meat will steam and turn grey instead of browning on hot fat.

3.) Breaded Foods:
Let stand about 30 minutes to allow coating to dry, meat or vegetables that have been dipped in flour, beaten egg or cereal crumbs need standing time to give the coating a  chance to set. Your patience will pay off in a much crisper crust.




                                               
Food Tips:

1.) A lemon at room temperature is juicier than a refriderated one.

2.) To re-use a left over baked potato, sprinkle with water then heat at 350 for 20 minutes.

3.) Once an onion has been cut, rub cut side with butter before putting in fridge. (it keeps better)

4.) When cooking corn do not add salt to the water, it will toughen the corn.

5.) Before heating fat for deep frying add a tablespoon of vinegar to it, food will absorb less oil and will be crispier.

6.) When cooking rice, always add rice to boiling water or milk, this keeps kernels separate and prevents rice from becoming mushy.

7.) To make rice whiter and fluffier, add tsp. of lemon juice to each quart of water.

8.) Wrap fresh ginger in a plastic wrap and freeze, it will keep for months and need not be thawed to use. The brittle texture of the frozen root makes it easy to slice or grate.

9.) Freeze homemade baby food in ice cube trays, remove and put in freezer bags. Then just take out as many cubes as needed.

10.) Keep unpopped popcorn in the freezer, it will stay fresh and you'll have less unpopped kernels.

11.) When measuring syrup or molasses, rinse the spoon or cup with cold water first, the liquid won't adhere to the utensil.

12.) a sprinkle of cornstarch or flour on top of a cake will prevent icing from running off.





Household Hints
1.) If you have a jar that is hard to open, turn lid-side down and smack it on the floor, if this doesn't loosen the lid, the bang will bring your husband running to open it for you.

2.) Store nail polish in refridgerator, it will remain smooth.

3.) When you get a new bike, write name, address and serial number on a card, roll it up, secure it with a rubber band, then drop into the frame. (if stolen and found, you have proof it's yours.

4.) Put fresh pine needles in dog house or under dog's bed to keep fleas away.

5.) Spray your childs art with hairspray to keep it from fading and getting dusty.
