The Vegetarian Corner
Vegetarians have all the fun!  This wonderful recipe fits right in to the winter season.
1/3 cup corn oil
1/2 pound white mushrooms, finely chopped
1 1/2 cups finely chopped carrots
2 onions, peeled and finely diced
6 cloves garlic, peeled, crushed and minced
3/4 cups walnuts
1/2 cup sunflower seeds
1/2 cup toasted sesame seeds
7 Tb. bulgur wheat soaked in boiling water 10
minutes and drained
1/3 cup chopped parsley
3 tb. tahini
1 cup tender chickpeas
1/4 cup tender red lentils
3 tb. soy sauce
2 tsp. cayenne
1 tsp. cumin
salt and pepper to taste
Heat the corn oil and saute the mushrooms, carrots, onions and garlic for about 15 minutes until golden. Add the cumin, thyme and cayenne. Cool.  Cook the chickpeas and lentils.Process the walnuts and sunflower seeds in a food processor. In a bowl, add the nuts and seeds and sesame seeds and bulgur.  Process the sauteed vegetables with the remaining ingredients and add to the bulgur mixute. Chill well.  Shape into patties and saute on each side until golden.  Flip and repeat.  Serve with a spicy tomato sauce and mushrooms on the side, broiled new potatoes and a green vegetable such as broccoli.

RAW FOODS
Green Goddess Garlic Soup

2 cups fresh juice with romaine, red onion, garlic and carrots
diced cucumber
1 cup red kidney beans, cooked
1 large tomatoe, diced
1/2 daikon radish, peeled and diced
fresh pepper

Add all ingredients together and serve
