lasagna

i simply must get the bloody scanner hooked up again; i miss the pictures.

sunday night i made lasagna for dinner. we had called gene's dad for father's day [mine is gallivanting around europe so he will just have to wait for his present and phone call] and were informed they were having lasagna for dinner. we both started salivating.

i suppose we could have driven the couple of hours to see them and invited ourselves to the dinner table but i didn't really feel like cleaning up; it was a sweats and tshirt kind of weekend. so instead i put the hair up in a ponytail, ran to the grocery, and came home to make my own.

i totally forgot what a complete pain it is to make lasagna. the result is definitely worth the effort but what an effort! i took my favorite vegetarian recipe and then changed it to add meat for the carnivore gene. it was fabulous -- a tasty mix of spinach, carrots and mushrooms with ground beast and italian sausage. add a whole pound of mozzarella and you the makings of a major meal, and about a week's worth of leftovers.

i shouldn't admit to this, but the best part of the whole culinary experience was playing with the food. i usually use creamed lowfat cottage cheese but gene is a tried and true ricotta man. fine with me, except the stuff doesn't spread nearly as nicely as cottage cheese. enter the fingers. i patted the stuff out into small flat disks and then mooshed it all over the noodles, sort of like finger painting. then sprinkled the chopped spinach on top, almost having to crumble it although that is totally the wrong word for what one does with a handful of wet clumpy leaves. scooped up handsful, literally, of the meat vegetable tomato sauce mixture and used my fingertips to make sure it covered the entire layers below. then on with the cheese, the grated variety, letting the soft little bits sift through my fingers onto the pan. repeat, hire weightlifter to pick it up and put it in the oven, bake and eat.

i think i'll take some for lunch today.
