NEW! Lo-Cal / No-Sugar Banana Muffins:
Ingredients:
1 3/4 cups all-purpose flour
1/3 cup sugar substitute (I use Splenda)
2 teaspoons baking powder
1/4 teaspoon salt
1 large egg -- beaten
1/2 cup milk, skim
1/4 cup unsweetened applesauce
3/4 cup mashed banana
Procedure:
Mash bananas and combine with egg, milk, and applesauce (Use overripe
bananas, they're easier to mash)
Combine all dry ingredients
Stir wet ingredients into dry ingredients, until just moistened (batter
will be lumpy)
Spray muffin cups with Pam, spoon batter into cups
Bake at 400 degrees for 20 minutes or until golden.
