Tamale Pie
you will need;
1 cup of chopped onion
1 cup of chopped green pepper
3/4 pound ground beef
2- 8ounce cans of seasoned tomato sauce
1 12 ounce can of corn,drained
1 cup chopped ripe olives
1 clove garlic minced
1 table spoon of sugar
1 teaspoon of salt
2-3 teaspoons of chilli powder
dash of pepper
11/2 cups of shredded american cheese (sharp)
Corn-meal topper;
3/4 cup of yellow corn meal
1/2 teaspoon of salt
2 cups of cold water
1 table spoon of butter/margarine
cook onion and green pepper in a little hot butter or greese until tender.  Add meat; brown lightly
Add next 8 ingredence.  Simmer 20-25 minutes, until thick.  Add cheese; stir till melted.  Pour into greased 10x6x1 1/2 inch baking dish. 
Make
Corn Meal Topper: Stir corn meal and salt into cold water.  Cook and stir till thick.  Add butter' mix well.  Spoon over hot meat mixture in 3 lenth wize strips.  Bake casserole in moderate oven( 350 degrees) about 30-40 minutes.  Makes 6 servings
Oven Hash
1 1/2 cups coarsely cooked ground beef
1 cup coarsely ground potaoes
1/2 cup coarsely ground onion
1/4 cups of chopped parsely
1 teaspoon of salt
dash of pepper
2 teaspoons of worcestershire sauce
1 6ounce can of evaporated milk

1/3 cup of slightly crushed cornflakes
1 table spoon of melted butter
heat oven at 350 degrees
lightly mix beef, potaoes , onion, parsely, seasonings and milk.  Turn into greased casserole .  Mix corn flakes and butter' sprinkle over top.  Bake in oven for 30 minutes till heated through.  good with katsup and musturd serves about 4
Szegedi Csireke Paprik`ias
(chicken stew Hungarian style)
3 tablespoons of lard /butter/marg
4 large onions, sliced
1 tablespoon sweet paprika (regular will due also)
1 teaspoon crushed caraway seeds
2 frying chickens( about 3 pounds each) cut into pieces
salt
3 cups of water
1 lbs potatoes,peeled and quartered
3 medium carrots thickly sliced
3 cups of canned tomatoes
pepper
Heat lard/butter or margarine in dutch oven.  When smoking hot , add onions .  Cook until soft and golden brown.  Add paprika, caraway seed and chicken pieces.  TOss and cook over medium heat for about 10 minutes until browned.  Sprinkle with salt.  Add water.  SImmer at lowest possible heat for 30 minutes or until chicken is  half way done.  Add potatoes, carrots and canned tomatoes.  SEason to taste with salt and pepper.  Continue to simmer for covered for 30 more minutes or until chicken is done and as tender as the veggies.  Served with buttered noodles or tarhonya and green salad goes well with this dish also.  6 servings about.

CASSEROLES
Beef Stroganoff
you will need;
1 table spoon of flour
1/2 teaspoon of salt
1 lb beef sirloin, cut in 1/4 inch strips wide
2 tablespoon butter
1 cup thinly sliced mushrooms
1/2 cup chopped onion
1 clove garlic , minced
2 talbe spoon butter
3 table spoon flour
1 tablespoon tomatoe paste
1 can of beef broth
1 cup dairy sour cream
2 tablespoon of cooking sherry
Combine 1 table spoon of flour and the salt; dredge meat in in mixture.  Heat skillet then add 2 tablespoon of butter .  When melted add the sirloin strips and brown quickly on all sides.  Add mushrooms, sliced onion,  and garlic; cook for 3 minutes till onion  in bearly tander.  Remove the meat and mushroom from skillet.  Add 2 tablespoon of butter to pan drippings;when melted blend 3 tablespoons of flour.  Add tomatoe paste.  Slowly pour in cold beef broth- cook; stiring constantly; until mixtue thickens.  Return meat and mushrooms to skillet.  Stir in sour cream and sherry beat breifly.  Serve with noodles

Salsa De Chilli Verde(green chill cheese sauce) you will need;
2 cans(4 ounces each) peeled green chillis
1 pound green tomatoes
1/2 cup of chedder cheese graded
1 garlic clove
1 cup minced onion
2 cupd of chicken bouillion
1/2 teaspoon of salt (or 2 taste)
take green chillis , rinse off seeds and chop.  Peel and chop tomatoes and mash garlic.  Simmer for about 3-5 minutes ; add cheese, simmer 3-5 more minutes makes 4 cups about
