Kamote

Its large, starchy, sweet-tasting, tuberous roots are a root vegetable. The young leaves and shoots are sometimes eaten as greens. Ipomoea batatas is native to the tropical regions in the Americas Of the approximately 50 genera and more than 1,000 species of Convolvulaceae, I. batatas is the only crop plant of major importance—some others are used locally (e.g. I. aquatica (kangkong)), but many are poisonous. .

Overview

Orange-fleshed sweet potatoes may be one of nature's unsurpassed sources of beta-carotene. Several recent studies have shown the superior ability of sweet potatoes to raise our blood levels of vitamin A. Sweet potatoes are not always orange-fleshed on the inside but can also be a purple color. Sometimes it's impossible to tell from the skin of sweet potato just how rich in purple tones its inside will be.

The sweet potato is only distantly related to the potato (Solanum tuberosum) and does not belong to the nightshade family. The genus Ipomoea that contains the sweet potato also includes several garden flowers called morning glories, though that term is not usually extended to Ipomoea batatas. Some cultivars of Ipomoea batatas are grown as ornamental plants; the name tuberous morning glory may be used in a horticultural context.

Nutrition

Although they're soft and creamy enough to be put in pies and called dessert, sweet potatoes are also a surprisingly nutritious vegetable they're fat-free, relatively low in sodium and have fewer calories than white potatoes — although they do have more sugar. Sweet potatoes are one of the best sources of vitamin A; a large one contains more than 100 percent of the daily recommended intake

Sweet Potatoes Types

You might've noticed the wide selection of potatoes at the grocery store as of late. There are actually more than 4,000 varieties of spuds, each with its own specific texture and taste.

If you're not sure what you're looking at, you probably skip the unfamiliar types -- their wonky shapes and strange names can be intimidating and stick to the standard russet, red, white and sweet potatoes. There's nothing wrong with that, but there's a world of potatoes out there that's totally worth discovering.

Health Benefits

It can be helpful to include some fat in your sweet potato-containing meals if you want to enjoy the full beta-carotene benefits of this root vegetable. Recent research has shown that a minimum of 3-5 grams of fat per meal significantly increases our uptake of beta-carotene from sweet potatoes.

Some nutritional benefits from sweet potatoes simply may be easier to achieve if you use steaming or boiling as your cooking method. Recent studies show excellent preservation of sweet potato anthocyanins with steaming, and several studies comparing boiling to roasting have shown better blood sugar effects (including the achievement of a lower glycemic index, or GI value) with boiling.
