"Braciole in Salsa di Pomodoro"

(Rolled and Stuffed Beef in Tomato Sauce)



FIRST, let's start with the
Sauce!

Great! Now, let's prepare the Meat and Stuffing for the Braciole!

For this you are going to need:

Now to begin the Preparation!

Take your freshly cleaned Tomatoes and slice them into medium slices. Then, quarter the slices. Cook these over a medium heat until they are soft. If you used Canned Tomatoes, simply hold them for use later. Be sure to drain the excess juice off before use. In another pot, we combine the Oil and sliced Onion. We'll set both of these aside for a few minutes.

In the next step we will first combine the chopped, sliced or pressed Garlic with the chopped Parsley, grated Parmesan Cheese, chopped Pine Nuts or Walnuts and the Salt and Pepper. This will give us our mixture for use in the next step!

Lay the Beef out on a cutting board. If you like, trim the excess fat from the edges. Add an equal portion of the mixed ingredients (from step above) to each of the Beef slices. Fold both of the sides in about 1" over the mixture. Then roll the Beef length-wise. You want rolls that are tight and will hold together while cooking. Pierce each roll with a toothpick to secure it. These have now become our "Braciole."

Allright! You've washed it, sliced it, chopped and diced it. You mixed it, fixed it, molded it and rolled it. Then we stuck a hole in it! I did all of that to mine. Did you do all of that to yours? If not, we can't go on to the next step. If so, Let us move on!

Now we take our Braciole and place it in the pan with the Onions and Olive Oil. Cook this on a medium heat to brown the sides. When the Braciole are browned you may add the Wine and cook it for a few minutes. You want to cook it long enough to evaporate the alcohol and still retain the taste. About 7 to 10 minutes at a moderate simmer.


We can now add our Tomatoes to the browned Braciole. Cook this mixture about another 10 minutes.

This is the FINAL Stretch! We are now ready to add the tomato paste, water and the salt and pepper. Blend the liquids to a smooth consistency. Now, cover the pot. Simmer it on a low heat for 1 to 1 1/2 hours. Don't forget to stir to prevent it from sticking and burning to the pan! Aahh, YES! What about the FRESH Basil? Add that about 30 minutes into the cooking process so you don't lose the fresh flavor. ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~

Now you only need to decide what to serve with the BRACIOLE!
