This is St. Patrick. He was a priest who went to Ireland to spread Christianity, and converted the Irish to the Catholic faith. He used the shamrock as a symbol of the Trinity. Legend says that he drove all the snakes out of Ireland.

Leprechaun Joke

(where "pppphhhhhbbbttttt" equals sticking you tongue between your lips and blowing air - rasping)

A man walks into a bar with a Leprechaun on his shoulder.
He walks up the the bar and sets on down.
He proceeds to order a beer for himself and for the little Leprechaun.
Well, the guy and the Leprechaun drink about two beers when
finally the Leprechaun jumps down off the guy's shoulder,
trots down the bar and stands in front of a rather large construction
worker. He looks at the construction worker and goes,
"ppphhhbbbttttttt" right to the big guy's face. Well the Leprechaun
trots on back on hops back onto his buddy's shoulder. The construction
worker is a little ticked, but decides to shine on this breach of manners.
After another beer and a half though, the Leprechaun
hops down and again goes in front of the construction worker
and goes, "ppphhhbbbbttt" to the construction workers face.
The Leprechaun trots on back and hops back on his buddy's shoulder.
The construction worker is visably bothered, but decides not to do anything again.
Well sure enough, the guy and the Leprechaun drink another
beer. Soon enough the Leprechaun hops down,
trots in front of the construction worker and goes, "pppphhhhbbbttttt!"
to his face. Well, this time the big guy has
had enough of the little guy's manners and walks
over to the fellow with the Leprechaun, again on his shoulder.
The construction worker tells this fella, "If your little
friend does that again, I'm gonna cut off his little willy!"
The fellow tells the big guy "Well Leprechauns don't have willies."
The big guy asks, "Well how does he pee?"
The fellow with the Leprechaun on his shoulder looks at the big guy
and goes, "ppppphhhhbbbbttttt."

Irish Recipes

Irish Soda Bread

Ingredients:
* 3 c Unbleached white flour
* 2 ts Baking powder
* 1 ts Baking soda
* 1/2 ts Salt
* 12 tb (1 1/2 sticks) cold, sweet butter
* 2 c Raisins
* 1 Egg
* 1/2 c Honey
* 1 c Buttermilk

Makes 1 large loaf.
Preheat oven to 350F.
Sift the flour, baking powder, soda and salt into a large mixing bowl.
Cut the butter into small pieces and add.
Cut it into the flour with a pastry blender until the mixture
is the size of peas.
Add the raisins and toss to distribute evenly, using two forks.
Beat the egg in another bowl until very frothy.
Beat in the honey.
When it is well blended, beat in the buttermilk.
Gradually pour the liquids into the flour, tossing all the
while with a fork so the mixture gets evenly moistened.
Continue tossing lightly with two forks until the batter
comes together; it doesn't have to be completely mixed
and should be very rough and lumpy.
Butter a heavy skillet or casserole, 10 to 11 inches
in diameter and 2 to 3 inches deep.
Round is the traditional shape.
Spoon batter out into the pan and push it gently to fill the pan.
It can mound up somewhat in the middle.
Bake at 350 F about an hour or until the middle is set.
Cut out a piece to test if necessary.
Cut into wedges and serve warm from the pan.

Crockpot Irish Stew

Ingredients:
* 2 lb Lamb, boneless; cubed, browned & drained
* 2 ts Salt
* 1/4 ts Pepper
* 2 c Water
* 1 sm Bay leaf
* 2 md Carrots; pared & cut in 1/2" slices
* 2 sm Onions, thinly sliced
* 4 md Potatoes, pared & quartered
* 1/4 c Quick-cooking tapioca; (opt)
* 10 oz Peas, frozen; OR
* 10 oz Mixed vegetables, frozen

Season cubed lamb with salt and pepper.
Add remaining ingredients except peast (omit tapioca if you
don't want gravy thickened).
Stir well.
Cover and cook on Low 10-12 hours.
Add peas during last 1-2 hours of cooking.
