History
Tequila is an old Mexican liquor made from the swollen stem or 'Quiote' in Spanish of the blue agave plant. The liquor gets its name from the small town of Tequila located in the state of Jalisco, Mexico. 
Tequila has its origins with the Aztec people who previously
made a fermented beverage from
the agave plant which called octli.

The word 'Tequila' itself is a mystery. It is said to be an ancient Nahuatl term.  The Nahuatl were the original people who lived in the area. The word means 'The place of Harvesting plants'.

Tequila was then first produced in
the 16th century.
There are 136 species of agave in Mexico, of which the blue agave, agave tequilana Weber azul, is
the only one allowed for use in tequila production.  Several different species of agave are allowed for
use in mezcal.
Types of Tequila
Unaged tequila which is young and adulterated which means that caramel, fructuose, glycerin and wood flavoring can be added to resemble aged tequila.
Oro (Gold)
Unaged white spirit.
Blanco (White)
Reposado (Rested)
Aged a minimum of two months, but less than a year in oak barrels.
Anejo (Aged)
Aged a minimum of  one year, but less than 3 years in oak barrels.
Aged a minimum of 3 years in oak barrels. This category was just established in March 2006.
Extra Anejo (Extra Aged)
