When we went to visit grandma in Trumbull, Connecticut, there was always something wonderful to eat. This is a family favorite that no one can duplicate quite the way grandma used to. It was dictated in broken English to Barbara Napolitano by Rose Capuccina in 1980 when she was 86 years old. Of course, she had to dictate it, because she never learned to read or write. All of her recipes were stored in her head.
Pizza Fritta Rose Capuccina
one potato
salt
flour
one yeast cake
warm water
Crisco
vegetable oil for frying
Peel and boil the potato in slated water until soft. Mash very fine.
Put yeast in one cup warm water and stir until dissolved. Mix flour and potato in a bowl and add yeast and water slowly. Mix well with floured hands. Add one cup of warm water at a time until dough comes together in a ball. Turn dough out onto floured work surface and knead until smooth. Add flour as needed until there is no more sticking.Rub the inside of a large bowl with Crisco. Place dough in bowl and rub Crisco on top of dough. Cover with a damp kitchen towel and let sit in a
warm place.When dough has risen to the top of the bowl, pinch it off into pieces the size of lemon. Fry each piece separately in hot oil until golden brown.
Serve warm with butter and powdered sugar.
