This page is dedicated to those bizarre food terms that you just ignore and pray it won't matter because you have no clue what they  mean.

Al Dente-  In Italian this means "to the tooth". It means that food is cooked just until it is cooked, not until it is
                  mushy.

Potato Nails- These are aluminum spikes that are placed in potatoes before baking. This speeds up the baking
                         time

Cheesecloth- This is a light weight cotton cloth that acts as a strainer for liquids. It can also be formed into a
                          pocket and filled with herbs and placed in a stock pot to flavor broth.

Chickpea- Another name for this bean is garbanzo bean. It is very popular in Middle Eastern dishes such as
                    felafel, and humus.

Free-range chicken-  Chickens that have been fed a strictly vegetarian diet, free of antibiotics and growth
                                        hormones. These chickens are obviously more expensive.

Capon- A rooster that has been castrated, fed a high fat diet, then taken to market by the time they are 10
              months of age

BMR-  basal metabolic rate. This informs us of the rate at which calories are used up when we are at rest

Devein-  This is when you remove the black intestinal vein of uncooked shrimp. It is easily, but tediousy done
                with a  sharp knife.

Dulse- This is an edible seaweed that is very pungent in taste. It is very high in trace minerals. It can be added
             to salads or eaten as a snack.

Felafel- This is kind of like a Middle Eastern meatball sandwich minus the meat. Ground chickpeas are
              seasoned , formed into balls and deep-fried. At this point they are ususally put into pitas and eaten
