Summer Recipe:
Chocolate Cannoli Pie
one pie
                                       
3 c.      whole-mild ricotta                                            3/4  cup chocolate chips
1/4 c.    suger                                                                1  prepared 9 inch cholcolate-cookie pie crust
1 tsp.    vanilla extract
1/2 tsp.  grated orange rind

Puree ricotta with sugar, vanilla and orange rind.  Melt chocolate chips in mirowave.  Mix 1/3 cup melted chocolate with half of the ricotta mixture.  Spread chocolate mixture in crust and plain ricotta mixture in center.  Drizzle remaining chocolate over top of pie.  Swirl mixtures together with the point of a knife.  Refrigerate 6-8 hours, until firm.
