Nau~T's quick Boca Taco's

    Ingredients
  • Original Boca Burgers (one patty per taco)
  • Corn Tortillas
  • Onion (white or green)
  • Sm. Bunch of Cilantro
  • Fresh Spinach Leaves
  • 1-2 Ripe Avocados
  • Salsa
  • 1/4 tspn cooking oil
Preheat oven to 350 degrees. Shred spinach, chop cilantro and slice onion thinly. Combine in a bowl and toss lightly.
Place cooking oil in a medium size skillet and turn heat on low. While the skillet is warming put the Boca patties in the oven to cook. Place a corn tortilla in the skillet and cook to desired texture. I generally cook the tortillas just enought to get them soft on one side, turning the tortilla over about 2-3 times, adding more oil, only as needed, to prevent the tortillas from sticking. You will need two tortillas per taco. While the tortillas are cooling, slice the avocado. Remove the patties from the oven and cut them in half. Layer the tortillas so that they over lap and place both halves of the patty in the tortilla with the cut side in the fold of the taco shell, garnish with cilantro, spinach and onion mix, avocado and salsa, give thanx and enjoy! Buen Provencho!

Mandisa's Slammin' Curry Tofu

    Ingredients
  • 1 carton Firm Tofu
  • 1 can coconut milk
  • Vegetable stock
  • Green Peas (can be substituted with any veg- i like the contrast of colors)
  • Olive Oil
  • Garlic
  • Onion if desired
  • Curry Powder
Slice the tofu into thick pieces, brown garlic in a skillet with the olive oil (and onion chopped fine). Add tofu pieces to the oil and brown each piece both sides- remove from pan. Sprinkle each piece with curry powder and let sit. Add the veg. stock to the pan and let simmer. Add coconut milk to pan- stir and put the tofu back in. As the tofu simmers in the curry sauce add frozen peas and cover. Careful while stirring not to break up the tofu. Remove and serve with brown rice, or coconut rice.
