Chop scallion whites and 1 inch of green.Melt butter over medium heat in large stewpot.Add scallions.Blend flour with salt and pepper.Toss meat in flour to coat.When scallions are translucent,add meat and brown on all sides.Add one bottle of beer,tomatoes,raisins,brown sugar,and herbs.Raise heat and bring to boil.Reduce heat,cover and simmer for 2 to 3 hours.Add the second bottle of beer for the final 10 minutes.Adjust seasoning and serve with noodles.



 

                                            
 

                                            2 tbs. oil                                                1 (4-ounce) can tomatoe paste
                                           2 medium onions                                    1 bottle of ale
                                          1 large green pepper                              1 tbs. cummin
                                          2 Jalapeno peppers                                2 tbs. chili powder
                                          4 cloves of garlic                                    1 tsp. oregano
                                          3 lbs. ground beef                                  1 tsp. cayenne
                                         2 cans pint beans                                    1/2 tsp. dry mustard
                                         1 (26-ounce) can tomatoes                     1/2 tsp. salt
                                                                                                        lots of fresh ground pepper
 

          Heat oil in a large stockpot.Add onions and peppers.Saute until cooked through but not browened,adding the garlic for the last minute or two.Add the ground beef and brown through.Drain off the fat.Add the remaining ingredients,stirring until combined.Bring the mixture to a boil and reduce the heat,cover,and let simmer for several hours,stirring occasionally,until the sauce thickens.Chili is best if cooked for a long time so add liquid if it starts to dry out.Serve with lots of crusty bread and lots of your favorite beer.


                                                                                                                                

                               5 dried tomatoes cut into thin strips
    2 tblsp red peppers
              2 cloves of minced garlic
   1tbsp horseradish
           1 tbsp. olive oil
                  ½ cup finely chopped onion
             3 cloves minced garlic
    1 cup sweet stout
 3 lbs. flank steak


                Cover approximately 3 lbs of flank steak with black pepper and sear in a very hot pan.Mix the onion, garlic, tomatoes, pepper and olive oil and cook at a moderate temperature. When done, toss in the beer, chili sauce and horse radish and simmer for seven minutes. Serve meat and sauce separately.

 

        1¼ cup flower
   ½ tsp salt
       ¼ tsp pepper
    2 eggs; separate whites and yolks cup whole milk
    ½ cup beer

           Mix above ingredients except eggs into a single blended sauce. Beat egg yolks and egg whites separately to medium thick consistency. Combine sauce with beaten egg whites, and then add blended mixture to beaten egg yolks. Coat both sides of chosen fish fillets with batter and pan fry.



12 0z.semi-sweet chocolate chips
24 large marsmallows
2/3 cup of stout
1/3 cup heavey cream
1 tsp. vanilla
1 tbs. creme de cacao
graham cracker pie crust
pinch of salt
whipped cream and shaved chocolate

Place chocolate chips,marshmallows,and salt in a blender
In two saucepans,heat stout and heavey cream until very hot but not boiling
(don't heat them together or the cream will curdle)
Pour stout and cream into the blender and blend at medium for 1 minute.
Add the vanilla and creme de cacao,continue blending until smooth
Pour the mixture into the crust and refrigerate 4 to 6 hours or until firm
Garnish with whipped cream and chocolate shavings.
