Favorite Recipes
It was suggested that we include some of our favorite recipes on our website.  I thought that was a great idea, so now you all have another job to do!  Send me your tried and true recipes, and I'll post them here.  Some of these are also found on the Recipe Exchange forum,  or are variations of them, but these are the ones we've used and enjoyed!.
Brownie Bites

12 Egg Whites
6  Tbsp. Cocoa
6  Tbsp. Splenda
1  Tsp. Vanilla or favorite flavoing
1 1/2 C. Oat Flour

Beat eggwhites til stiff, then add Splenda and cocoa, then flavoring. Stir in flour by hand.  Bake at 350 in a muffin tin, or baking dish for 15-20 minutes. Makes 6 servings for an A breakfast..  I PAM the pan and take them out just as soon as a knife inserted in the middle comes out clean......they're moister that way.

Simple Smoothies

1/3 C. Liquid Egg Whites (All Whites)
2 Tbsp. Splenda
1/2 C. Water
1/2 C. Frozen fruit


Throw it all in the blender and mix until the desired consistancy.  If you use fresh fruit, add 1/4 C. of crushed ice to thicken it.  I freeze these overnight for my snacks at work.  By breaktime they're thawed and ready to drink.  Or, you can keep them frozen for an "ice cream" type treat!

Chicken & Vegetable Risotto

2  C. Sliced Mushrooms
1/2 C. Chopped Onion
4 Cloves Minced Garlic
1 Tbsp. Dried Parsley
1 Tbsp. Dried Basil
6 C. Chicken Broth
1/2 C. Uncooked Rice
2 C. Broccoli (cooked crisp tender)
1 Lb. Chicken Breast or Tender, cut into          1/2" pcs. cooked
2 Cans Salt-free Diced Tomatoes
or 4 Plump Fresh tomatoes chopped
1/2 Tsp. pepper

Heat non-stick skillet until hot, then saute onions, mushrooms and garlic.  Cook until tender, about 5 minutes.  Add parsley and basil and cook another minute. 

Bring broth to a boil in saucepan, then reduce heat and simmer on low.  I cook the chicken in the broth.

Add rice to mushroom mixture; cook and stir over medium heat 1-2 minutes.  Add chicken broth to mushroom mixture, 1/2 cup at a time, stirring constantly until broth is absorbed by the rice before adding the next 1/2 cup.  Continue adding broth and stirring until rice is tender and mixture is creamy, 20-25 minutes.

Add the rest of the ingredients.  Stir and cook 2-3 minutes or until heated through.

Pizza

1 Egg White beaten until frothy
1/2 C. Oat Flour
Garlic Powder to taste
1 Tsp. Fennel Seed (optional)
Mushrooms
Green Peppers
Onions
Chicken, Turkey Sausage, Gr. Beef
Tomatoe Paste
Mrs. Dash Herb & Garlic

Combine beaten egg whites with oat flour, garlic powder and fennel seed.  Mix by hand adding water as needed to get a pancake-type consistancy.  Heat a non-stick skillet to very hot.  Spray with cooking spray.  Pour mixture into pan and cook until brown, then flip and cook other side until brown.  Cool on wire rack.

While crust is cooling, saute mushrooms, peppers, and onions.  Mix tomato paste with Mrs. Dash or seasonings of choice and spread on crust.  Top with veggies, and meat.  Bake on wire rack in oven at 400 for 10 minutes.

I made the Italian Sausage, and Marinara sauce submitted by Chef-B and used them on this crust with onions, peppers and mushrooms.  It's the closest thing I've found to real pizza yet!  These also freeze very well.  This recipe makes 1 serving for an A lunch or dinner.

Mandarin Orange Pineapple Spice Turkey Meatballs

5 Mandarin Orange Spice Teabags
1-1/2 C. White Wine
2 Lbs. Lean Ground Turkey Breast
1/4 Red Onion, diced
1 Tbsp. Crushed Garlic (4 cloves)
1 Tbsp. Crushed Pineapple, drained
Dash of Pepper
Arrowroot to thicken

Steep teabags in wine for 10 minutes.  Squeeze teabags gently, and discard.
Set wine aside.  Blend turkey, onion, garlic and pepper in a large bowl.  Pour 3/4 C of wine mixture into meat and mix well.  Form into small meatballs (yields 35-40 meatballs).  Try not to make them too big, it's harder to cook through.  Brown meatballs in a large non-stick skillet, drain and set aside.   Combine wine and pineapple in skillet with arrowroot over medium heat until thickened.  Add meatballs to sauce and simmer 15 minutes.  Good over rice.  I suggest Jasmine rice.
