Outrageous Oatmeal Muffins
12 egg whites, slightly beaten 3 cups quick oatmeal 1/2 cup unsweetened applesauce 1/2 tsp baking powder 1 tsp vanilla 2 tsp cinnamon1 2 pkts Splenda Beat egg whites until frothy (but not stiff). Fold in the other ingredients. Portion batter to make 12 regular muffins. Sweet and Spicy Shrimp
1/2 cup pineapple juice 1/2 tsp dry mustard 2 cloves of garlic 1-2 tbsp brown sugar twin (I can't find it so I use splenda) 1 tsp ginger ( I don't use it) 2 tbsp of balsamic vinegar 2 tbsp sherry or white wine peeled, deveined, and cleaned shrimp Combine all ingredients except shrimp, mixing well. Add shrimp and let marinate 30 minutes. Grill or barbecue, brushing with leftover marinade. Serving Idea: Serve with sticky japanese rice. Kristin
Spicy Grilled Tilapia
2 lb Tilapia Fillets 1 tsp garlic powder 1 tsp onion powder 1 tsp cumin 2 tbsp chili powder (make sure it has no salt)
RInse tilapia fillets with cold water and pat dry. Combine spices and sprinkle on both sides of fillets. Place on heated grill or in preheated broiler. Cook 4-5 minutes per 1/2 inch. Turn once, halfway through cooking time. Kristin |

BBQ Sauce
tomato sauce home made or store bought, no sodium added. 1 onion finely diced 2 sprigs celery finely diced 1/2 green pepper finley diced 4 cloves garlic (large ones) finely diced
saute these together until onion is opaque add tomato sauce liquid smoke about 1 cap full splenda to your sweetness level 1/8 tsp black pepper 1/2 tsp crushed red chilies 1 to 2 tsp maple flavoring simmer for about 5 min. Victor Baker - Chef B |

My Egg Wraps
2-egg whites(or egg beaters) cinnamon nutmeg splenda spreadable fruit(any flavor on plan)
Use 10-12" non-stick frypan. Spray with Pam. Heat pan and pour in the egg, moving it around the pan to thin it. sprinkle with cinnamon and nutmeg. when firm enough to flip, flip over for a few seconds to cook that side. Take out of pan and put on plate. Let cool a little. Add serving of spreadable on top and spread. Roll up and sprinkle more cinnamon,nutmeg and splenda. Eat! Margie |

Paella
From member LReneS: One of my favorites 16 oz chicken breast, cut into 1" cubes 2 cups uncooked white rice 8 cloves garlic, finely chopped 1 onion, sweet yellow - sliced 1 red bell pepper, sliced into strips 3 cups chicken broth, no fat or salt added 1 tsp tumeric 1/2 tsp paprika 1/2 tsp pepper 3 cans tomatoes, diced no salt or sugar added 16 oz shrimp, peeled and deveined
Preheat oven to 350�. Heat very large skillet over medium-high heat, add chicken and cook 10 minutes or until chicken is no longer pink. Remove chicken from pan. Add rice and garlic to pan, cooking 5 minutes or until rice is browned, stirring occasionally. Add onion and bell pepper, stir in chicken broth, tumeric, paprika, pepper and tomatoes. Place chicken and shrimp on top of rice mixture. Cover and bake 20 minutes or until heated through. Let stand 5 minutes before serving.
