Allergies

If the allergy test stated "cow's milk", then it would not apply to goat's milk. However, over the 45 years I have been involved with allergy testing, I have found it to be very, very inaccurate. I am not saying that one should ignore it all, but as a child remains on SCD, the allergies fade away.

I remember case after case of people getting well on SCD and feeling that they wanted doctor supervision to give them support nonetheless. During the first few years, I recommended some holistic doctors who appeared to support my work. Invariably, the patient would call back in tears. Why! Because they were showing tremendous improvement on SCD and they were testing positive to all the foods they had been eating and upon which they were getting well.

Just let me add my two cents.

With all due credit to the allergists (they were the first in the medical profession to look at food as the culprit in so many disorders), they, for some reason (not scientific) decided that allergies are based on proteins (and parts of proteins like peptides). Therefore, all that emerged from them for the last 25 years had to fall into the gluten (protein) and casein (protein) categories.

They stuck to their guns in spite of the growing body of evidence which showed us about autoimmunity and the role of bacteria in creating the autoimmune condition. And the role of feeding these bacteria and yeast on a surplus of carbohydrates in the incubation tank of the gut (the colon).

But the whole world of gluten had taken on a life of its own! Again, those who wish to follow GF/CF and are finding relief, well, that speaks for itself. For those who need more, there is always SCD.

Before we realized my daughter couldn't do almonds we blanched them first, then
dehydrated them, then ground them (made us feel like we lived in pioneer
times!) and the final product was as good as anything we could have purchased.
If you don't dehydrate them they will turn to "butter" when you grind them.

Yes, we grind up pecans and walnuts, whole, in our Vitamix and get a decent
"flour" from it from which we make her muffins or coat her chicken. Good

You might want to start with the blanched almonds and work up to using the
whole ones... Or like somepone else wrote earlier use another nut if the
almond seems to bother him...

Linda, I'm cheap ;-) Ive been buying bags of almonds from Costco (I know its
not organic but.... Its about $5.00 for 3 lbs) putting them thru my food
processer with the grater attachment on, I do 4-5 lbs this way and then put
them in a ziplok in the refig. Then when I need flour I pour them into the
coffee grinder I found at costco Its made by DeLongi, it was $25.00 you can
adjust the grind, it actualy kind of smashes the nuts, usualy I use the drip
grind... if you go to fine it will make almond butter down in there and then
its a MESS to clean! It needs to be shaken, turned upside down ect while
grinding, but it will work!

Makes a really fine fluffy flour, kind of between white and whole wheat in
texture. Most people don't know its almond....

Gracie Cake

3 eggs
1/2 c butter
2/3 c honey
4tsp baking soda
4 tsp cinnamon
2 tsp ginger
2 tsp nutmeg
4 cups almond flour
1 1/2 c shredded zuchinni
1 1/2 c shredded carrots
1 1/2 c shredded cabbage
3/4 c raisins
1 c shredded coconut
1 c flaked coconut
1 can crushed pineapple (name brands seem sweeter)

Put in a 9x13 greased pan. I turn my oven on 400 put the cake in and drop
the temp to 325 bake about an hour

Makes a really moist cake similar to carrot cake. you can also add chopped
walnuts, I have been known to shop some apple ect. You can leave out spices
or things you don't like and add others... Gary says it just needs a nice
cream cheese frosting! ;-)

We eat this cake for breakfast and snacks

That's what Sally Fallon suggests in the book "Nourishing Traditions".

Soak the almonds or pecans (4 cups nuts to 2 tsp sea salt, add filtered water), leave in a warm palce 7 hours or overnight, then dry in a dehydrator or a warm oven (no more then 150F) for 12 to 24 hours. I find it takes the full 24 hours. .

That book talks about this making them more digestible, the soaking breaks down enzyme inhibitors. . But doing it does not really take much work, and it definitely makes a difference, for me it doesn't give you that heavy feeling, less gas, that eating a raw nuts always gave me. (Though we are not eating whole nuts at all right now, and are only starting to try to re-introduce nut flour.) Even with this soaking method though, I think that whole nuts should be avoided totally, and just go slow with the nut flour. We are trying to make our own, so we can do this to the nuts first, to see if it helps my son tolerate them better..

Dear Julie, You wrote asking about nystatin. You said: << Because he is dairy free we have not yet tried the yogurt >>. I have several comments, based on personal experience and BTVC.

I believe it would be a real risk to put him on Nystatin when he is not able to have yogurt. Nystatin is a mold-based anti-fungal. If you kill off the candida with the Nystatin, what will replace the candida in the intestine? Without the yogurt passing through to replace the candida as it dies off, you have a risky situation. Unless you can use pro-biotics. Even so, I believe Elaine recommends the yogurt above all. It would be worth trying to see if he can tolerate probiotics or yogurt. Maybe you want to try dripping it as detailed in BTVC as that is easier for many sensitive ppl to tolerate. He needs to build up those good flora. And then he may not need the nystatin. Healing happens one step at a time.

Nystatin is not always the best choice of anti-fungals. If you could have him tested, some labs test the particular strain of candida he has to see what will kill it and what won't. On a scale of 1 to 3, my particular strain(s) of candida reacts to Nystatin only at a 2. Three would be best. It doesn't seem worth it to take Nystatin in this case.

My experience is that the positive effect of eating yogurt is so much greater than the killing effect of anti-fungals. Still, you may have to start with the a-f's. What other choices do you have? The grapefruit seed extract is a good choice. These things can take time. But you need to get some good flora in him above all. Esp. with the gr seed extract killing off candida--what is replacing it?

I hope this will help in your difficult decision about Nystatin. I know a good legal dairy-free acidophilous here in America if you are interested.

I just wanted to remind everybody of this:
Yeast and mold and fungus are all related, like cousins. Anytime you introduce one, they ALL have an orgy and produce multidinous offspring exponentially. So if you eat blue cheese (mold), it will cause yeast and fungi to boom in your intestine.
I feel the same applies to Nystatin (mold) for some ppl. Likewise, if you eat mushrooms (fungus), there can be an explosion of yeast and mold in your system. Also, they all thrive on sugar, and it will cause the same kind of population explosion.

Oregano oil is a popular and effective supplement for people with candida overgrowth and intestinal imbalance. It is an anti-fungal of excellent repute. It is prescribed by naturopaths for people who do not do well with Nystatin and other pharmaceutical anti-fungals. Naturopath Dr. G. Young writes "Oregano oil is a powerful anti-infectious agent (for respiratory, intestines, genital, nerves, blood, and lymphatics) with large-spectrum action against bacteria, mycobacteria, fungus(yeast), virus and parasites."

A note of caution: Oregano oil does contain one natural phenol--methyl chavicol. If one is phenol sensitive, perhaps Grapefruit Seed extract would be a better choice.

A personal note: I am quite sensitive to synthetic phenols, but not to natural ones. Perhaps others are in this category. For me, oregano oil is much more tolerable and effective than any pharmeceutical anti-fungals. I also take GSE. The combo is working well.

Hi...sorry so late a reply. I have been taking an oregano oil which my Naturopath recommmended because it is emulsified, thus easier to digest and utilize. I really like it a lot as there is no reflux from it and it seems quite effective.

You are having such a difficult time! I'm sending up a prayer for you. It sounds like he is reacting to the mold-base of the Nystatin. Have you considered trying the Grapefruit Seed Extract? It is said to not kill the good bac's, while it wipes out the bad ones. Many ppl do much better with that than with Nystatin, and with the oregano oil (see previous post).

Oil of oregano, garlic, onion, coconut, cinnamon (I think), are all natural anti-bacterials/fungals. I've rotated all of these with Colin. They are all used in the recipes (well oregano in the spice form not oil) and seemed to have helped Colin. However, the best of all was the yoghurt.....! :) We are currently trying monolaurin until we can get C successfully back on his yoghurt.

Yes. Oregano oil is the most effective natural anti-candida and anti-yeast remedy. Lots of ppl swear by it. Naturopaths nearly always prescribe it.
Interestingly, oregano flowers are the favorite flowers of my bees. They must protect their hive against mold and fungus in the wintertime and I feel certain they somehow know to get the oregano into their honey to protect themselves.

Bananas

Only ripe ones with brown spots are allowed. No plaintains.

Actually some people in the very beginning even cook their bananas because it helps them tolerate them better..

The solution to the never having ripe bananas, is to just buy a lot of bananas at different times. I always have several bunches sitting around my kitchen at various stages of ripening.

Also, you can freeze some when they get very ripe, just wrap in wax paper individually, and then put several into a freezer bag. Then, you will always have a supply of ripe bananas, so when you need one, and you don't have any ripe ones at the moment you can get one out of the freezer. Besides, a frozen banana is like a very special treat, so yummy it is like ice cream!

BEGIN THE DIET





Kyle's Mom,
I know you are feeling overwhelmed. I hear you--I am a single Mom. I quit my job when Colin got diagnoised to get him started on this diet. It does take a lot of work.

However, the way I always explain it to myself--feeding kids in general takes work. To cook a meal, you always have to cook a meat, veggie, etc. But with the SCD you just have to plan the meals more, the snacks, the juice, and always be prepared.

Here are some suggestions:

  1. Try a few basic foods at the beginning. Either the intro diet (boiled burgers, chicken, fish), gelatin, broth, etc. or a variation of that.
  2. Add new foods slowy.
  3. Once you know some SCD foods he tolerates, spend one day a weekend cooking and freezing ahead. If you have the funds, you can hire a helper (or friend!) to help you cook and freeze.
  4. Prepare snacks and have them on hand.
I put cute bags full of cooked, sugar free bacon in the fridge, backs of goat gouda, and have ripe bananas frozen on a stick or ready to give plain. I also am cooking necterines and peaches ahead (it tastes like applesauce). If you son doesn't have diar. you could eventually try dry fruit and nuts; but I wouldn't in the early weeks. I wish I could give you menus. It's not that easy. We really got to know our son one food at a time. No one can tell you what he is ready to digest. That is only something you will know by observation---whether he gets gas, burping, his stools, etc. Keep a diary.

I know it turns your world a little upside down at first. It is like being our grandmothers again; I understand why mine was always in the kitchen now! She cooked everything from scratch. But you know, my son still thanks me for helping him. His tummy was in pain and he couldn't tell me that before. That is what keeps me cooking despite the effort. I have to cook him food that doesn't hurt him. The GFCF always did.

Way to go! I'm glad you're going to give the diet a try. Jen has already given you some great advice. Here are a few of my thoughts. The diet does take some extra preparation, but I do a lot of it on weekends and just freeze or refrigerate the items until I need it. For example, the Lois Lang bread is extremely easy to make (I just throw all the ingrediants in my mixer and then pour it in the pan) and one loaf lasts me a week (in the fridge). I eat it plain, toasted, or sometimes add shredded cheese (don't get the kind that is already shredded because it probably has additives) and melt the cheese on top. I make a batch of muffins and freeze half and use the other as a snack (they have honey so they are nicely sweet). The banana bread is yummy and also serves as a snack. We keep veges available that can be quickly steamed or stir fried (takes approx 10 min either way). If we cook a steak during the week, we cook an extra big one so I can have left overs during the week or freeze for a later time. Same goes for roast, which is what I'm doing today. Once you're sure that you son will tolerate yogurt, get a yogurt maker that will make the most yogurt at one time. I actually use two, make them both on the same day and have enough yogurt for the week (unless I cook with it, and then I make it biweekly). Good luck,

Dear All,
It has been my experience (and I know I have said this before), that before removing the whole spectrum of grains including corn, spelt, etc. etc., people (and especially children) will react adversely to just about all the legal (allowed foods) in SCD. They, parent, therefore, come to SCD with trepidation based on their previous bad experiences.

After introduction of SCD with the removal of the glutenfree products (ughh, uggh and more ugg) especially the horrible corn and corn syrup and the rice, after they are removed, then introducing the legals carefully, slowly and working up, most of the time the children will do just fine.

Crucial? No. A good idea? Yes. We never did it--though we tried--because my daughter simply refused those foods. But it's a really good transitioning/cleaning out the body thing to do regardless of whether you have diarrhea or constipation. Marisol

GETTING KIDS TO DO THE INTRO DIET

How do I get my son started when he won't eat barely anything on the intro diet?

Think like a kid for the intro.
For the homemade gelatin - cut it into kid shapes
If he won't eat eggs you could mix them ,cook them flat & then cut them into more shapes.
Apple cider or grape juice (1/2 juice, 1/2 water) frozen into popsicles
The broiled beef patty rolled into little kid size meatballs.

Unless his symptoms are severe - cramping and Diarrhea, one or two days on the intro diet are sufficient (BTVC p51)

If it is only a day or two than you could just make as much as you need from the intro diet and let him fill up on that. Then after that give him a balance of foods from what he will eat that is SCD legal.

My son sounds like yours. He had D since he was born. Between 5-8 mushy or D diapers a day. He would never drink milk. I started the diet Feb 2001, hubby joined me 100% SCD in May of 2001. The kids were almost there so in March of 2002 we decided to put them on the diet. My little guy, who just turned 3, responded excellently. He started having trophies right away. As long as he has variety within what he can eat he is quite happy with SCD. He tells my parents that he can't eat polysaccharides 'cause it makes him sick. He occasionally gets into things he is not ready for like raisins or unpeeled aples and that sets him back a bit. But his setbacks get shorter each time. Hope that helps.

I can empathize with your situation. I know it is emotional--I can only compare it to the detoxes I've witnessed (for alcohol) on TV! My son was so addicted to carbs and sugars. It killed me to watch him beg for his old foods.
However, I knew it was for his best interest. I considered it tough love, because I truly believed I was responsible for restoring his health and that he needed this diet. I also thought about other (healthy) countries--such as China, Japan, etc.--they eat the same thing for breakfast as they do all day (meats, veggies, etc.).
I went cold turkey in order to clean out his carbs and sugar cravings and attack the yeast and bacteria full force. I ate with him (which helped) exactly what he had. We ate soup for breakfast and squash "pudding" with honey. If he didn't have problems with eggs (breathing) I would have served those too. We ate ostrich or turkey patties for lunch, lamb, etc. I added fish, shrimp, other cooked veggies. After 2-3 months I realized he wasn't "healing" on the meat and veggies alone (even with probiotics). So, we added yoghurt. It was really then that we saw the true healing occur. How about eggs, sugar-free bacon, jello (not all do well on gelatin however--including Colin), ripe bananas....and then cautiously add the yoghurt? You could eventually add nut flour products to the AM too which helps you in expand a lot.

OTHER IDEAS FOR THE INTRO DIET


I have to say that the best thing for me has been the starter diet MINUS ALL CARBS. The no-carbs I find works best because it totally eliminates any food for the undesirable bacteria to chew on, and it makes recovery that much quicker. This may sound quite boring, but I assure you it need not be.

Instead of chicken soup (which I got tired of REALLY quick),I bake a chicken or chicken pieces and eat them plain. I find the breast meat too dry, so I don't buy just breastmeat. Sometimes I take the cooked chicken meat off and make patties in the food processor - just chicken (including the skin - it's too dry without) egg, salt and pepper. Blend up and cook as patties in a little oil or butter. You can then top these with cheese or dripped yoghurt if you can tolerate these.

The leftovers from cooking (all the stuff in the bottom of the pan) can be used for an instant broth - just add salt and maybe a bit of water - great for when you are dying for a nice hot cup of...something! I find that organic chickens tend not to have too much fat and does not require that you take the fat off. (Also, the fat helps you to feel full).

I also make patties the same way using beef mince. Or just cook up the mince in a pan with a little oil or water and you get a crumbly mixture which can be eaten anytime - hot or cold.

Other things I use regularly are grilled mutton chops, canned or fresh fish (canned tuna or salmon, olive oil, cider vinegar, salt and pepper, maybe some boiled egg: instant fodder!).

If you make extra at a time you can freeze leftovers or chuck it in the fridge and have food on hand anytime.

I do recommend that you just eat as often as you like so that you are not hungry - there is nothing worse than being hungry AND being limited in what you can eat. Obviously this is going to be more difficult if you are also nauseous, but hang in there! there is better to come! If you start your diet really basic, you can look forward to better times (and flavours) in the future.

I have been on the starter diet lots of times now and each time I find it gives me a boost of healing. If anything even slightly plays up, I just go back to basics and, hey presto, I am back on track. Such as when I came off the drugs, after a little too much experimentation, when I overdo the baking (I can't help myself sometimes!).

Congratulations on your choice to improve you life, you will not regret it! (Except when you can't have...)

How about a Burrito? Beat the egg and cook in a pan like a pancake, turning when brown and set aside, saute the meat adding some tomato juice when it is well browned and cook. Carefully spoon it on to the pancake, Add cheese. Roll and return to the pan for the cheese to melt or microwave for a minute to accomplish the same.Carol F.[You can skip the cheese if your child is milk sensitive]

AFTER THE INTRO DIET

Basically, Start out on the intro diet for at least 2 days and then very slowly add small amounts (1 Tbsp) of new items. Wait a few days in between to see how each new food react. You will be making a baseline from the intro diet to add new foods to and gauge her response.

When you start adding veggies they should all be cooked, peeled and deseeded. You should wait a while on cruciferous veggies - vegetables in the Brassica or cabbage family. These include cabbage, broccoli, brussel sprouts, cauliflower and turnip. Same thing for when you decide to try the 24 hour yogurt. Start with a Tbsp a day and work up to more.

IMPORTANT TIPS FOR BEGINNERS

Reread the book and you'll see Elaine has a chapter devoted to what's "legal" to eat and what's not. None of the foods listed under headings such as NOT ALLOWED means you should avoid them under all circumstances.

BUT, and this is an important "but" ... if you read the book carefully, you'll learn that what is OK for people who have been on the diet for 1 year is not OK for folks who have been on it for 6mos.. And newbies should not think it is OK for them to jump quickly into eating foods that are OK for people who have been on the SCD diet for 3mo.

We all have to start out with the diet for beginners ... and usually we find it helpful to return to this very simple list of foods when we're having a flare. After the first few days, personal experience should be the guide as to what can and can't be eaten at this stage, i.e., what makes for more, rather than fewer symptoms. Some people are allergic to foods that others can tolerate well. Some people are sicker than others when they start the diet.

Sometimes when people on strong medications such as Prednisone begin to taper off, they find they have to take it easy on some foods that had once been OK.

The SCD diet isn't an easy one to follow. It requires patience and careful observation.

But nearly everyone on it seems to agree: The SCD diet is WELL WORTH THE TIME AND EFFORT it takes to follow it

Candida

Candida is a yeast infection - an overgrowth of yeast. There are two basic diseases caused by yeast: (1)overgrowth in intestine, and this infection actually (2) getting into the bloodstream. Most of the literature written for the general public deals with the first; overgrowth in the gut.

An excellent book, The Missing Diagnosis, by Dr. Orion,Truss was written (referenced in my book). However, some writers later perverted some of this work and one book came out with recipes which were not good for those people about which Dr. Truss talked. (Dr. Crooks' book)

My opinion from recent research findings (especially that of William Costerton) tells us that gut yeast and bacteria live in a biofilm with many species of microorganisms. I always say they ride piggey back on each other (simple language for the biofilm idea).

Some people are obsessed with yeast infections and think they are a single entity in causing the bowel problems, etc. I do not agree. That is one problem I have had with the books (even Dr. Truss's and, especially, Dr. Crook's).

However, in some people, cutting back on honey, not only because of yeast overgrowth but because of bacterial overgrowth as well, some people claim they do better at the beginning of the diet. Others can eat honey from the very start and do very well.

EGG SUBSTITUTE
"What can I substitute legally for eggs in baking for both moistness and binding?"

You can use baked and pureed butternut or acorn squash, mashed ripe bananas, homemade apple or pearsauce (I just bake 2-3 apples with cinnamon and and just a touch of honey until soft, but not soggy and then put in my blender to roughly chop for a few minutes) . This is what I have been using and it works well as long as your child does not have any problems tolerating these items. If the recipe says 2 eggs, I usually substitute 1/2 cup of the mashed or pureed item.

Enzymes in solution: I've been thinking that maybe the variable results seen with different persons may be due to insufficient dissolution of the enzymes in the stomach. It has always been recommended to drink a good sized glass of water when taking enzymes. Kids sometime won't drink much with meals, and so the stomach mixture may be kind of thick, making it difficult for the enzymes to be dissolved enough to saturate the food bolus. Enzymes don't work unless they are in solution in the stomach. Maybe those who are putting the enzymes in drink for their kids are seeing better results?

Timing:
Enzymes need to be in solution in the stomach at the same time as the food to work properly. If the enzymes come in a veggie cap, such as [Enzymedica Gold], these may dissolve slower in the stomach. It is recommended to take a whole capsule 30 minutes before a meal/snack. Gelatin capsules dissolve within 2-4 minutes under stomach conditions and so you can take them right before eating at the beginning of the meal. If you are opening the capsules and mixing the enzymes with food or drink, just eat or drink this at the beginning of the meal. So if you mix with applesauce or honey, eat those few bites first.

Grazing:
Grazing is when a person doesn't sit down and eats 3 meals, but rather eats a little or snacks all through the day. For grazing, there are a couple of strategies that can work. One is to mix the enzymes in a drink and have the child take a drink before eating. The enzymes will stay active in the drink for up to 4 hours if it is kept cool. You can keep it in the refrigerator or add ice to it (or both). Another method is to sprinkle a little enzymes on a bite of food whenever he eats. Capsules open easily, sprinkle some out, and then reseal the capsule with the rest.

Some parents do very gradual dosing when starting enzymes with their children. This may be helpful in reducing any hyperactivity. Begin by adding 1/8 of a capsule to eat meal for a couple of days, then 1/4 of a capsule for a couple of days, then 1/2 and so on. Here is one description.

I started Daniel on 1/8 capsule with dinner for three days, then I increased by 1/8 capsule increments in one meal at a time every three days. Initially he had a very jaded appetite and some diarrhoea, pains in the stomach and lots of burping. Once he got to half a capsule with each meal, at the end of week three, I increased by 1/4 at a time, to see how we went with speeding up the process a little.

For the first 24 hours approx after each increase I saw an increase in verbal stimming and some loss of appetite. This was much more noticeable when I started increasing by 1/4 capsule instead of 1/8. There was also a slight temporary increase in hyperactivity and/or inability to focus when increasing by the larger amount.

Enzymedica has enzyme specialists too and their products contain no fillers. They have several to choose from. I have tried several of their products. The Carbo or Digest Gold is a good substitute for Zyme Prime as a general all-purpose one. They don't have a sub for the Peptizyde BUT because the SCD has fermented foods which pre-digests the casein, this may not be an issue for some and you may find that any strong protease products (like , Repair, Purify, etc) will do just fine. The No-Fenol is the kicker and most likely to also help with fiber. The closest match to an Enzymedica product would be the Candidase because it contains cellulase and protease (but doesn't have the other stuff).

But as long as you start with some type of digestive enzyme, that will help with food breakdown and assist with the SCD.

There are two enzyme products which look particulary well suited for SCD goals and foods. The first one is a product that has been sold about a year online. I talked with the owner/formulated at length today in 3 separate conversations. He was really forthcoming with information and detail, and thoroughly knew his stuff. I like the balance of the enzyme types and quantities. No token amounts just to say 'we have more enzymes than anyone else'. It looks like a good, thought-out mix of things that would coordinate well with the purpose and foods of the SCD. I am trying a bottle myself. The price is good. I am calling their manufacturer about the trace minerals (which some people think make the enzymes work better). It includes magnesium stearate for the 'fill' helper which is SCD approved. A good one to consider.

Another product is the Digest Gold by Enzymedica. This is a good one too but much more expensive (unfortunately), so it would be cheaper to try the Ultra-zyme Plus first, and then the Digest Gold. A note on the acidophilus in Digest Gold. The probiotics in enzymes are generally 'token helpful' amounts. Not nearly enough to take the place of the yogurt or a straight probiotic product. It is just a nice-to-have in enzymes if anything. Some people do not think probiotics are beneficial if taken with meals anyway. The Digest Gold has some ingredients that appear would be beneficial on SCD (the other one has these as side-activities or listed differently). Enzymedica makes products I think of as 'clean', no fillers, amounts that go to work, and good quality. They just are a bit expensive for regular use, as enzymes go.

Do you have a list of foods that he does best with? For example, I don't tolerate carrots either but I can handle well cooked squash. So when I redo the intro (for flus, colds etc) I make plain chicken soup, (chicken & water - no vegetables) pour off some of the broth and blend in either the cooked squash and a little salt. It turns into cream of squash soup. If I am particularly unwell (stomach flu etc) I concentrate on the chicken broth & electrolyte solution. As I improve I'll add very diluted grape juice or honey tea and then pureed veggies. In the past when I have been very sick I have pureed everything - meat included. My kids laugh and say I am eating baby foods, But it works to jump start my recovery everytime.(Sheila)

WHY COOKED FRUITS CAN BE EATEN IF A CHILD HAS YEAST

It is only the sugars and starches that are not broken down and absorbed which get to the lower bowel to feed the microbes (yeast and bacteria). Furthermore, the gurues who suggest this often allow grains which are so bad because the starch is all sugar which is unlikely to be broken down and absorbed and will feed and overfeed the lower bowel microbes.

If you decide to try fruit you should start with cooked, peeled, deseeded fruit like homemade applesauce or pear sauce. Ripe bananas (lots of spots on the peel) are also good to start with. When she is handling that okay then try peeled raw fruit like apple. The most important thing is to go slow adding new things so you can judge if she tolerates them well and also in case she does have a reaction that it won't take to long to rebound from setbacks.

This may sound a bit weird but since Daniel doesn't tolerate any seeds yet if I am going to give him strawberries I actually cut off the seeds on the outside and then slice up the rest. I have also been known to peel grapes for him. He does okay with raw apple but only if I peel that also. Raw pineapple goes right through but legal canned pineapple seems okay.

I went to the "real milk" websit (www.realmilk.com) and found several people who will ship it to you. You could look there (they give a listing by state) and see if there is anyone close to you, as I am not sure where you live. The 2 I found that I thought would work for me was one in Ohio and one in Texas. I decided to try the one in Ohio because I live in Virginia, and they ship it frozen, and I thought it would be better because it is closer. But it probably didn't matter because I think the one in TX also does 2 day delivery, so it would haevprobably taken the same amount of time. Anyway, here is the info from teh website about the one which I ordered from:

But, I did want to add that on the Real Milk listing website, also under Ohio, they listed another dairy, and it said this is the only place in Ohio licensed to sell raw milk (selling raw milk in some states is illegal -- it must be pasteurized---I am not particularly worried about this because we are heating it fro the yogurt, not drinking it plain. PLus the raw is supposed to make a better yogurt because it still has active enzymes and etc) Anyway, right after the listing for O Brock's it gave the other listing: Yellow Springs: Young�??s Dairy. This is the only dairy that can legally sell raw milk in the state of Ohio.

But it's possible that has changed, I don't know.

And then there was a place in Texas who shipped anywhere, and I think they are the big one, and I know one woman on the LI list a long time ago used to buy it from there. And that is:

You are all so awesome and amazing to go to these lengths to get the Mystic Lake Goat Yogurt for your starter. Your kids are blessed. 2 Hints:

  1. ) I only need to use only[ 1/4 cup per quart] for starter. Sometimes it just looks so good I use a heaping [3/8 cup]. It seems to turn out the same. And I am even using non-fat milk since I have auto-immune disease.
  2. ) I still drip my yogurt for 30 minutes after it is done. I find this makes it much easier to tolerate--I am problem free that way. I really recommend dripping.

INITIAL BAD REACTIONS TO YOGURT

When I first started trying yogurt with Katie, (back in April), I would see mixed reactions.

On the positive side I would see more speech and more assertive communication skills (asking for things, interacting with me). I sometimes saw some more social skills (calling to a friend from the trampoline).

On the negative side, I always saw greater temper -- tantrums, crying, etc. which made me stop giving it to her.

Then I talked to Mimi, bit the bullet, and started giving her goat yogurt regularly. After about a week or two, the negative temper stuff seemed to go away, but the improved communication continued.

Just recently, she went "off" the yogurt for several days, and I believe I saw a regression -- a bit more withdrawn, and less development in language.

Why can have honey and fruit on SCD despite the yeast?.

There are two reasons for this.

1)Honey has predigested sugars which are most likely to cross the intestinal absorptive surface into the blood steam and thereby be inaccessible for intestinal yeast and bacteria.(From Elaine)

2)The yeast lives in a biofilm inside our intestines.Biofilms are comprised of a primary layer of bacteria that provide an attractive environment for other bacteria and larger organisms

The yeast cannot flourish in our gut without the other gut pathogens

If we cut down on the other gut pathogens with SCD then the yeast cannot do well.

What Are Biofilm Communities? Biofilms are a hot topic in microbiology today. Scientists are studying the ways bacterial colonies form these slimey layers, which can be resistant to antiobiotics and the immune system, in hopes that new information will help us understand how the layers form, adhere to surfaces, and how they can be prevented.

Biofilms moved to the forefront of microbiology after a 1994 case that involved the infection of hundreds of asthmatics. It was found that all the asthmatics used the same inhalant contaminated with a bacterium known as Pseudomonas aeruginosa. This bacterium was able to survive the routine disinfection of the inhalant during manufacturing by forming a biofilm comprised of many colonies. The contaminated inhalers contained pieces of the biofilm which were transported directly to the lung tissue by the asthmatics. In the lung tissue the Pseudomonas biofilm was able to flourish. One hundred people died from the biofilm infection, a dramatic example of the danger posed by some bacterial biofilms.

Biofilms can be found in many areas of the human body and the environment. Teeth, intestines, medical devices, contact lenses, drainage pipes, and the bottoms of ships. The common demoniator is all the biofilms are comprised of a primary layer of bacteria that provide an attractive environment for other bacteria and larger organisms. Biofilms found on the hull of a ship consist of large organisms like barnacles, mussels, and host of other zooplankton and phytoplankton. These biofilms slow a ship and are expensive to remove and prevent. Current methods to prevent biofilm formation on ships include a wide variety of toxic marine paints. However, these paints tend to wear off and biofilms which are resistant form on them without regard to the toxins.

++ I don't have the name of a brand of legal coconut milk but I do have how to make your own. I vaguely remember Deborah posting that (according to a fellow who's in the know) all canned coconut milk has added gums whether it is on the label or not.

Nut Milk
A milk made from raw nuts can often be used in place of dairy milk. To make a nut milk liquify one cup of blanched almonds with 4 cups of water in blender., Add 2 tablespoons raw honey for sweetness. decrease water for creamier milk store in refrigerator 4 or 5 days at the most the remaining almond paste after it is strained can be tossed on vegetables or in soup. This can be used to replace milk in recipes such as custards and puddings
It is fine to drink also. More nuts in proportion to water gives a richer milk. This is somewhere between whole milk and half and half in richness. 1 cup and approx two tablespoons almonds For a less rich milk use 1/2 cup almonds then 2 1/2 cups water works best if warm Put nuts in blender and blend approximately 2 minutes (more or less) depends on your blender. The nuts should be pulverized. Strain the resulting stuff to remove the nut chunks.I use a mesh coffee filter (ex, Melitta gold filter) and a rubber spatula to force the liquid through. Paper coffee filters are too fine, and kitchen seives are too coarse. this makes approximately 2 cups You can also line the seive with cheesecloth

Coconut Milk

In blender or food processor combine 1/2 cup each grated unsweetened coconut and boiling water.

Blend until coconut is finely ground. Strain through a fine sieve or a piece of clean muslin.

Squeezing to extract all the liquid. Discard coconut, Makes about 1/2 cup

Instead of discarding the almond or cocnut paste you could warm it with some raisins & cinnamon, or cut up apple pieces and then serve with some yogurt. My new motto is waste not want not. :)

Last week I made hazelnut milk. Tastier. Just drop twohandfuls of hazelnuts into your blender, add a litre of tepid water, add a spoon of honey if you like and a small pinch of salt. Spin for a couple of minutes at highest speed. Pour through a sieve and keep in the fridge.

You may want to add some natural vanilla (from the bean).

COOKING THE FOOD WELL AT THE BEGINNING OF THE DIET


Our first priorities is to get the maximal amount of food in a
digestibale,
absorbable form leaving little for bacterial growth (or yeast - they ride
piggy back on each other).
Don't worry about cooking the food well. We have to cook it to break down
the cell walls of the plant material or else the substances inside the
cells
of carrots, apples, etc. will not be absorbed because of the rigid cell
walls in uncooked food. It then keeps going down, down and feeds those
critters which adapt to any energy (calories) that come down.







PARASITES

Parasites: the garlic solution
One thing you can do to help your son straight away is give him RAW garlic, the real thing. What I did a couple of months ago was open up a capsule, empty it and pop in a piece of garlic, just big enough to fit in the capsule. Be sure to give the capsule immedeately after putting the garlic in, because the capsule tends to 'melt'.
There is also the other way. This is no joke, rather an embarrassing thing to suggest, but highly effective. It was suggested to me by my homeopath last summer and it works really, really fast and effective.
You probably know about pills you do NOT take orally but rectally. The same thing you can do with your above described homemade garlic capsule, but you do not even need the capsule. If taken rectally, do not cut into the garlic as it can be a bit sharp for the skin. Find the best suitable piece and go ahead. If you administer the garlic rectally at night, you will certainly find the garlic in your toilet the next morning. The itching will be over. Repeat after 14 days, even if there are no complaints at that time.
Again, don't be offended or anything. Just trying to help.

I always try to take my probiotics before I start to eat a meal, as I have read that the stomach acid is lowest at that time.
If I forget to do that, then I take them btw meals.
If I really need them, I take them whenever as I figure some of them will make it to my gut no matter what.

Elaine answered:
I would not start probiotics until about day 5 on the diet. I would only go for 3 billion a day to start with - divide the doze: am. and pm.

[This means 1/6 of the tiny scoop,to be given twicw a day].



Start slowly with the acidophilus. You don't want more than 3 billion divided over a day when you first start. I believe that would be less than 1/3 of the little scoop (From Elaine)

Die-off in Colin included throwing up (his first experience with probiotics; I < think we gave him too much!), diarhea., constipation, and light-brown-yeasty looking stools. You just have to keep experimenting with the amount.

And, it works better on an empty stomach. We give it to him with a little juice mixed with water. I know a little legal sugar can help get the bacteria to start eating and doing their job!!!

PROBIOTIC DOSE
Starting Acidophilus
You need to start with really, really small doses and build up gradually. I started with half of the tiny scoop per day with Katie (30 lbs), and built up to one tiny scoop in the morning and one tiny scoop in the evening.

Elaine recommends starting out with 1/6 of the tiny scoop,to be given twice a day.

FOR KIDS WHO HAVE EXTREME SENSITIVITY TO THE PROBIOTIC

Yes, the custom probiotics acidophilus is very high concentration. Jen gave Colin three of the small scoops. The small scoop, if you don't have it, is very very small. Call Harry and ask him to send you one. We had major problems tolerating the probiotics at first, and I also was thinking of Elaine's recommendation for 3 billion. So, here's what I did:

I took one of the large scoops (which is about 1/4 tsp), and blended it in exactly one cup of filtered water. I then gave William 1 tablespoon of that water. So if you do the math, then theoretically, (if you blended it well and the liquid was homogenous) each tablespoon should have about 4 1/2 billion cfu's (4.7 billion to be more exact).

I also took one tablespoon of it, and then I tossed the rest. I know this may seem wasteful for an expensive product, but for us it was the only way, and we had to try very small amounts, and I wanted to be exact, to know how much he was getting. Then, I slowly increased that amount. I began giving it twice a day. Now, we are tolerating it much better, and use a small scoop to measure and don't have to waste any, don't have to measure out the water, etc.

Sonya inspired me to come up with this version for super sensitive children:

Take one tiny scoop,mix it in one tablespoon of water.Then give your child one tiny scoop of the mixture of water and probiotic.gradually increase the amount of tiny soops you give your child.You administer it inside a cup of SCD legal juice.

Splendia is a horrible sweetener. I am haunted by what the manufacturer has done to the sucrose molecule. Made it indigestible by putting in chemical bonds that not even a healthy person can break and adding a chlorine atom to each corner of the molecule. OH, boy, what a great new mutated bacterium will develop in the colon when that strange molecule gets down there. Saccharin is the best. Walgreens in Chicago carried it; don't most drugstores in USA have it. In Canada, it goes under another name; just ask the druggist.

STEAMING THE VEGETABLES

When I say steam, I mean I steam my veggies until they are super tender.
(Even when I first started I used to steam the veggies then puree them in
the blender. I used to do that when they were babies.) I bought a little
collapsible steamer from Wal-mart (about $5 Canadian). It is also quicker
than boiling because steam is hotter than boiling water. You could try a
little bit of an already well established vegetable as the next "new
thing".
In other words, just try a well steamed vegetable in tiny amounts,
then wait
a day etc. Also, my kids really prefer the steamed veggies well over
boiled - much tastier. If you steam, the veggies you don't lose all those
wonderful vitamins in the cook water. Can you tell I am a great fan of
steamed veggies? :)

I have always thought it was good to eat the veggies just lightly steamed,
very crisp, preserve more nutrients, etc. BUT, in the very beginning,
peeling and cooking them breaks down the cell walls and makes the intestine
able to absorb them.

Hi all. We always peel and boil vegetables really well. In my mind, I always
thought it was better to make sure Colin's stools were regular first. If your
body isn't ready to digest raw or steamed food....then you will continue to
feed the bad bacteria....and may not absorb the vitamins anyways. Once the gut
is more healed, and you can truly break down the vegetables, then you can
abosorb these nutrients.
Colin still can't do raw veggies. Some people on the regular SCD list have had
similar experiences. For Celiacs if you recall from the book--Meat is the
easiest to break down, then fats, then everything else (even the SCD legal
foods). But everyone is different. Each individual damaged gut is just
that--individual. Colin's was especially damaged. I am waiting patiently...

stevia * caution * (list) Stevia is an herb native to South America, and is now grown and cultivated throughout the world. Stevia belongs to a family called Terpenoids. According to The Organic Constitutents of Higher Plants by Trevor Robinson, 2nd edition, page 158, "This class of glycosides (terpenoids) often have physiological effects on mammals and microorganisms."

Elaine has noted on the adult listserv that, "Its molecular structure resembles a steroid. It is not SCD legal." However, on the Elaine's Children list, she indicated that it might be used in strictly limited quantities for those children who absolutely cannot tolerate either honey or saccharin.

Powdered stevia should be approached with extreme caution. At least one manufacturer of organic stevia includes "erythritol" which they claim is a "natural free flowing agent". Erythritol is what is called a sugar alcohol. Sugar alcohols include things like mannitol, xylitol, and sorbitol which are used in a lot of commercial "sugar-free" stuff. They're allowed to get away with that because normally, our guts can't digest those sugar alcohols. But the bad bugs in our guts can, and will have a field day on them.

If you elect to use stevia as a sweetener, read all ingredient lists very carefully, and research all ingredients. "All natural" or "organic" does not mean "SCD Legal." If you are using stevia, and do not appear to be gaining any ground on SCD, it would be strongly recommended to eliminate the stevia for several weeks and keep a food log.

Yup, the pectin as an added ingredient is illegal. Pectin, like that which is found in apple peels, can be used by harmful bacteria. That is one of the reasons why at the beginning of the diet you should peel, core and cook apples.
When it is concentrated, as when it is an added ingredient, you are getting a huge hit of pectin (which is a complex sugar) and any remaining "bad bacteria" will eat it up and say thank you.



CONSTIPATION
PS If constipation lasts more than a few days, try boiled down prune juice and
OJ mixed together. Elaine has the exact amounts..

Many people have found it easier to stop the supps when the diet is introduced and then add them back one at a time, once any die-off has happened and you are seeing some steady progress. a)it's easier to track the effects b)you may find you don't need all of the supps you were using before. However, some parents have discovered there is one or more supp they are unwilling to do without. There is no definite "right or wrong" here. SCD is about listening to your gut and your child's and doing what feels right each step of the way. Not everyone approaches it this way, I'm sure, but I have found for me, it has been the way to go. Whenever I have gotten uptight about how it's going, it is always because I am beset with the "I should's" - I should be doing this, I should be trying that, I should be adding this........
As for whey protein, it is illegal.

The most important thing that you can do for your child's health is to restore the GI system and get rid of the endotoxins produced by the intestinal pathogens.So it is optimal to make your supplements as SCD legal as possible.

We found any drop of illegals made a difference with Colin.

This joining the listserve on autism, I have been overwhelmed by the number of supplements which some parents are using. I am not prepared to even comment on most. In using SCD for bowel problems, I did not encounter this problem.

I have always maintained that in crisis situations, one should forget the restrictions of the diet and take whatever is necessary.

Therefore, it seems to me that if you have found the supplements to have contributed to marked improvement in your child that you continue with them and do the best that you can with the diet.

Kirkman's UNFLAVORED colostrum is legal. The flavored version is illegal.

I think there is a more straightforward answer about the SuperNuThera. It is sweetened with sorbitol and sucralose, which are sugar alcohols and are both major, major SCD illegals. In fact, Elaine has said about sucralose that you can GIVE your child IBD with it.

Unfortunately all the Kirkman liquid products, and all their sweetened powders, contain sucralose and sorbitol. However, most (not all, but most) of their capsule products are SCD legal - a few contain tapioca flour.[Tapioca flour is not SCD legal.]When I put my son on Kirkman's B Complex with Co-Enzymes about a year ago (3/day) he made tremendous gains.

Sulphates Legal When a fruit such as peaches (dried) and coconut is sulphated, it means it has been exposed to sulphur to keep the color from darkening. Some people are allergic to sulphated products but most of us are not bothered by them.

Xylitol Illegal Sorbitol, mannitol, and xylitol are all sugar alcohols and are not SCD legal. They fall under the category of indigestible carbs and sugars, and so allow companies to label things 'sugar free', even though they are providing nutrition to the bacteria that live in your digestive tract.

Yes. A few. I really make an effort to eat as many high nutrient foods as possible so I can minimize supplements. But I feel a few can be so important and helpful.

I love the Freeda vitamins as compared to the many other multiples I have tried. I also take their B and C Stress blend. Thanks, Elaine for the Freeda's !!

I take the plant-based enzymes from Prevail detailed in an e-mail I sent a few minutes ago, the Vitase Digestion Formula. They are effective and gentle.

I take a wonderful calcium supplement from Thorne Research. They have several. I believe the choice of which one is personal as people's mineral needs vary in amount so much. I find these excellent and well-absorbed as they are in caps, not pressed.

I take magnesium from Tyler, Magnesium Glycinate Plus. I have found it is the best absorbed and utilized, if a bit pricey.

I take a C-500 Complex Bioflavanoids Rutin from Nature's Life with my meals. The Vitamin C is as Ascorbic Acid. The Lemon BIoflavanoid Complex provides "Hesperidin, Naringenin, Eriocitrin, Flavanols, Flavones and Phenols from Acerola Berry Powder, Hesperidin Bioflavanoid Complex, Rutin Complex." So caution to those who react to natural phenols on this one. Otherwise, they can be helpful. The "other ingredients" listed at bottom are: calcium carbonate, cellulose, silicon dioxide, magnesium stearate, bell pepper, rosehips powder and micro-cellulose coating." I wonder if Elaine has any comments about these "other ingredients".

Finally, I like to keep on hand a bottle of parsley leaf tablets from Nature's Way for when I am too busy to get enough parsley in my diet.
It is so full of minerals and good things, I feel we should eat lots of it all the time, as well as other greens.

LEGAL ALA & DMSA

Can anyone post some brands of ALA and DMSA that they know are SCD legal?

Since you asked a question about legality I will answer. Be advised there is more to chelating than taking DMSA and ALA. There is an entire protocol of dosing schedules and dosing amounts. Also antioxidant and mineral support. Very complicated IMHO. See Autism- Mercury Yahoo group for lots of detail. THAT SAID, I have used DMSA from VRP (www.vrp.com) inactive ingredients are microcrystalline cellulose and hydroxy propyl methyl cellulose. The Trader Joe's brand of ALA (Alpha Lipoic Acid) has cellulose, gelatin, magnesium sterate. Country Life BIOCHEM brand of ALA (Lipoic Acid) has cellulose, gelatin, silica, magnesium sterate and calcium silicate. I think cellulose is allowed in the small amounts used as fillers for supplements. If I am wrong PLEASE someone point this out. : )

I just want to note that I have consistently found that calcium tablets and capsules go zipping right through my son's digestive tract utterly untouched which means he's getting no benefit from them (never mind how I found out, just trust me). For this reason I highly recommend the use of powders. Kirkman's powdered hypoallergenic calcium and powdered magnesium citrate are legal, as is Thorne Research's Cal-Mag Citrate powder. Thorne is available at www.bayho.com. Or you can crush the tablet if you want.

Is it legal or not?
I think the SCD will accomplish everything milk thistle does and will avoid the side effects including diarrhea, etc.
But I have no expertise in herbs and some people swear that some herbs have accomplished amazing results.
Considering that the report found on Medline came from controlled research under the auspices of NIH and STILL no conclusive answers, how can I give it my stamp of approval? I realize that most people want "black and white" answers from me. In this case, I cannot say it is illegal because it just might hasten up the process of detoxification of the liver.
If you have been using it and there has been no diarrhea and you can see results, then use it.

TOOTHPASTE

- It may not be a problem for most, but toothpaste was a major problem for us. I believe it was part of what brought my son's return of symptoms, and only when we stopped the toothpaste and switched to a different brand of slat did he begin to have a major turnaround. AND then I had not told my husband, and he used it to brush his teeth one night a week later and the next day he had runny stools again. We aslo were using Tom's of Maine, and it had carrageenan, natural flavors, other stuff. He is only three, was 2 at the time, and so was swallowing it all the time, does not spit yet at all. Anyway, there was a big discussion on the LI list about toothapste, and most people who can spit don't have to worry about this, but for those who do, one woman who was a dental hygienist told me that many dentists have told her actually not to use toothapste at all on the little ones, that it "tears up their guts", were her words. And that it is perfectly fine to brush their teeth with plain water, that it is actually the brushing action, and just make sure they brush for long enough. This is what we do, and we be sure to brush the tongue too to deal with frexh breath issue, and you can even buy a tongue scraper now. They say that it really is the bacteria on the back of your tongue that causes bad breath anyway, so I just don't wory about not having the minty fresh thing. Sonya

Baking soda is a good tooth paste and is ok for enamel. This I am sure of. I am a dental hygienist. So you should be fine using that. Karen.
