What is Saturn Flight?
This can really be answered two ways.

Saturn Flight is the title of the comic series created by Alex Truell.
Saturn Flight is also the designation given to the elite starfighter squadron that stood as a symbol of human and Shishohn unity.  It was disbanded after the Great Declaration, but has since been reclaimed by a few of the pilots of the squadron.
Can you explain the perspective the Shishohns have on the common religions of humans?
The Shishohn worship a goddess, Shishohra, who they believe is one of innumerable gods.  While they only worship the one goddess, they believe in all others presented to them.
According to Shishohn religious texts, Shishohra gave birth to their world after mating with their blue sun (the Star of the Shishohn).  In the process, Shishohra stole the soul from their sun, which was released as the Shishohn race within the newborn world.  This star is the symbol all Shishohn bear over their right eye.  This story explains their creation while also supporting their monotheistic beliefs.
Her creation is being judged by all other gods, as all gods have creations of their own.  Each god hopes to prove their might through having the superior creation.  These gods are constantly messing each other up in attempts to get an upper hand (explaining such incidents as meteors, floods, and storms).
The most drastic of these underminings, according to radical Shishohn religious/political movements, was the arrival of humans.  According to their beliefs, the god of humans, commonly referred to as Jehovah, created a flawed world, and so he set his mind against all other creations and sent his children, humanity, to corrupt the children of other planets.  The most radical of these teachings claim Shishohn lived in an utopia until humans arrived.
