| Turkey Croquettes | ||||||||||||||||||||||||||||||||||||
| 2 c. cooked turkey (cubed or shredded) 3/4 c. white sauce (recipe below) 1/2 tsp. salt 1 tsp. lemon juice 1 egg 1/4 tsp. celery salt . cracker crumbs 1 egg yolk (slightly beaten with 2 T. cold water.) |

| Combine turkey, white sauce, salt, lemon, egg and celery salt. Mix well, cover and refrigerate overnight. Form into cones. Roll in cracker crumbs, dip slightly in beaten egg yolk with 2T. cold water. Then roll again in cracher crumbs. Deep fry untill golden brown. *serves 8* *This is a very nice recipe to use with leftover turkey after a Thanksgiving meal.* |

| White Sauce | ||||||||||||||||||||||||||||||||||||
| 1 c. milk 4T. flour 1/2 tsp. salt 4T. butter dash pepper |

| Scald milk (just before boiling, bubbles around the edge). In a double boiler melt butter, stir in flour and salt. Then add scalded milk. Stir untill thick. *makes a little over 1 cup of white sauce.* |

| One Pot Cube Steaks | ||||||||||||||||||||||||||||||||||||
| 4 cube steaks 6-8 medium potatoes 2 cans cream of mushroom soup |

| Preheat oven to 350 degrees Peel potatoes and cut into quarters. Pour soup in dutch oven or small roasting pan. Add 2 cans water. Place meat in bottom and push down. Add potatoes, pushing them under as well (as best you can). Cover and bake 1 hour. Remove from oven and enjoy. * If you do not like cream of mushroom soup, you can use cream of chicken soup. * If you would like your meat to be more tender, after 1 hour, cut heat back 50 degrees and cook for 30 more minutes. * The starch from the potatoes turns the soup into gravy. * Serves 4 |
