Pumpkin Cookies

1/2 cup canned pumpkin
1 1/2 teaspoon pumpkin pie spice
1 1/4 cup sifted flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup raisins
1/2 cup chopped nutmeats
1/2 cup shortening
2/3 cup sugar
1 teaspoon orange extract
1 egg
Cinnamon-sugar

Combine pumpkin and spice; set aside.  Sift together flour, baking powder, and salt.
Stir in raisins and nuts.  Cream together thoroughly shortening, sugar, and orange extract; beat
in egg.  Blend in pumpkin mixture.  Stir in dry ingredients.  Drop by teaspoonfuls onto
ungreased baking sheet.  Sprinkle with cinnamon-sugar.  Bake at 375 degrees for about 15
minutes.  Remove from baking sheet promptly.  Cool on racks.  Yields 4 dozen cookies.
Cookie Monster Cookies

1 pound butter or margarine
2 pounds brown sugar
4 cups white sugar
1 dozen eggs
8 teaspoons baking soda
1 tablespoon vanilla
3 pounds peanut butter
42 ounces oatmeal
1 pound M&M's
1 pound chocolate chips
7 to 8 cups flour
1 tablespoon light corn syrup

Beat butter and sugar; add eggs.  Continue with each ingredient.  One-third cup of dough
makes a large cookie.  Recipe makes 4 1/2 dozen of this size.  Or you may drop by spoonfuls
for smaller cookies.  Bake at 350 degrees for 15 minutes on a greased cookie sheet.

Chocolate Chip Pumpkin Cookies

1 cup oil
3 cups sugar
2 eggs
5 cups flour
2 teaspoons baking powder
2 teaspoons baking soda
1 teaspoon salt
2 teaspoons nutmeg
2 teaspoons cinnamon
1 large can pumpkin
2 cups chocolate chips (12 ounce package)
1 cup nuts, chopped
2 teaspoons vanilla

Mix oil and sugar; add eggs and beat well.  Sift together flour, baking powder, baking soda,
salt, and spices.  Add flour mixture alternately with pumpkin.  Beat after each addition.
Fold in chocolate chips, nuts, and vanilla.  Drop onto a greased cookie sheet and bake
at 375 degrees for 10 minutes.  Makes 4 to 5 dozen cookies.
Note: These cookies do not spread so you can place them relatively close together.
