Sarah and Jim's Super Spinach Tortillas!
Ingredients:
This recipe makes about 12 tortillas, you can make 8 big ones or 16 small ones just depending on how you cut them and how big your pan is. We use spinach but you could use any pureed vegetable like bell peppers or caramelized onions!

Whole Wheat Flour
Unbleached White Flour
Spinach puree
Salt               
Garlic Powder
(for plain tortillas use 1 cup water instead of the spinach puree)
Step 1: Puree spinach with enough water to make 1 1/3 cup.

We used about a cup of spinach, and added water a little at a time, blending in between until it made about 1 1/3 cup of liquid.
Step 2: Mix all the dry ingredients in a large bowl, add the spinach puree and mix, adding more whole wheat flour if it is too wet. Cut the dough into 12 pieces, roll out the pieces into 8 inch rounds.

We mix the dough in the bowl until the dough is sticky but holds together in a ball. Then we plop it onto a heavily floured surface. We use whole wheat flour, the texture is better in the end and it burns less when cooking. The key here is to use just enough flour so the dough won't stick while cutting the twelve pieces, then use lots of flour when rolling, otherwise the dough will stick.
Step 3: Heat a dry pan on medium low heat, set rolled tortilla on hot pan, flip after 15-30 seconds then remove after another 15-30 seconds.

We have an assembly line procedure where one of us rolls while the other cooks and stacks, it really is quite the production so consider making two batches in one round of cooking. We always put a fork under the bottom tortilla to keep it from getting soggy from condensation, if you have a wire rack to set them on that would work well.
Now you can make the most delicious tortillas you have ever had, and you no longer have to spend $3.00 on 6 organic tortillas at the store when you can make your own at home for practically nothing!
