Ingredients:
2 T. Oil
1 Small onion, fine diced
1 C. Converted or long grain rice
2 C. Chicken stock or water
Procedure:
In a heavy pot heat the oil on high heat and then add the rice and onions, stir
constantly until the rice starts to brown
Add the hot chicken stock and bring to a boil
Reduce the heat to very low simmer, cover and cook until the liquid is gone
and the rice is cooked to al dente
Notes:
When the liquid is add a loud crackeling sound should happen
After the liquid is added the rice can be finished covered in a 300°F oven
until it is cooked
Ingredients:
Rice pilaf
12 Grains Saffron
Procedure:
When cooking the rice pilaf as directed add the saffron when adding
the liquid
Serve hot with an entree or cold in a salad
Notes:
This rice is good for serving with seafood dishes
Saffron is very expensive
Ingredients:
Rice pilaf
1 Tomato, seeded, chopped
1 Green pepper, seeded, diced
1 T. Curry powder
Salt
Cayenne
Procedure:
Cook rice pilaf as directed
Just before the rice is cooked add the tomatoes, peppers and curry
Season to taste and serve
Notes:
A little more liquid may have to be added to the rice
The amount of curry may vary according to taste
Ingredients:
2 T. Butter
4 Eggs, beaten
Rice pilaf
1/2 C. Peas
2 T Soya sauce
Procedure:
In a large fring pan or a wok heat the butter and scramble the eggs
Add the rice, peas and soya sauce and cook until hot, stirring
occasionally
Serve with other stir fried dishes
Notes:
Cooked, diced meats such as chicken, beef, pork, shrimp, etc. can be
added to the fried rice if desired
Use low sodium soya sauce
Ingredients:
2 T. Butter
1 Lbs. Fresh mushrooms, sliced
2 Green pepper, chopped
2 Red pepper, chopped
1 Stalk celery, chopped
6 Tomatoes, seeded, chopped
Rice pilaf
1 T. Paprika
Salt
Fresh ground black pepper
Cayenne
Procedure:
In a large skillet heat the butter and cook the vegetables until done
Add the rice, season to taste and reheat until hot, serve
Notes:
All this ricipe is a fancy name for vegetable fried rice
Serve with cajan dishes
