Ingredients:
1 C. Ketchup
1/4 C. Horseradish
1 T. Lemon juice
1 t. Worcestershire sauce
1 t. Tabasco sauce
Procedure:
In a mixing bowl combine all the ingredients and stir until blended
Season to taste, serve in a bowl, garnish
Notes:
Serve with shrimp cocktails, hors d'eouvres, veggie trays, etc
The amount of horseradish can vary according to taste
Garnish with lemon, lettuce and other greens, shrimp, celery curls,
etc.
Spaghetti With Tomato Sauce:
Ingredients:
2 C. Ketchup
2 oz. Tomato paste
2 T. Sugar
1 T. Fresh herbs of choice, diced
Vegetables of choice
1 Lbs. Ground beef
Salt
Red pepper
Spaghetti noodles
Procedure:
In a large sauce pot simmer the ketchup, paste, sugar and herbs
In a skillet fry the veg. and beef until cooked, drain off the grease
and add to the simmering tomatoe sauce
Simmer for 15 minutes, stirring occasionally, serve on pasta,
garnish
Notes:
Vegetables used can be such items as celery, carrot, onion, mushroom,
tomato, sweet pepper, etc.
The sauce can be flavoured with such herbs as basil, thyme, parsely,
oregano, marijuana, etc.
Ingredients:
1/4 C. Chopped onions
1 T. Olive oil
1/2 C. Water
2 T. White vinegar
1-2 T. worchestershire
1/4 C. Lemon juice
2 T. Brown sugar
1 C. Chilli sauce or Ketchup
1/2 t. Salt
1/4 t. Paprika
1/4 t. Fresh ground black pepper
1 t. Mustard, or chilli powder, or curry
Procedure:
Sauté onions until browned with olive oil
Add the rest of the ingredients and simmer for about 20 minutes
Use as a dip or baste onto grilled foods such as chicken, beef steaks,
pork, hamburgers, hot dogs, etc.
Notes:
Honey sugar can be used in place of the brown sugar
Other food items can be added such as fresh herbs, other spices,
flavourings such as smoked (hickory, misquet, etc.), puréed melons,
etc
Ingredients:
1 C. Ketchup
1 Clove garlic, minced
2 Tomatoes, seeded, chopped
2 T. Sugar
1 T. Fresh basil, chopped
1 C. Grated cheddar cheese
Salt
Red pepper
Procedure:
In a sauce pot, simmer the ketchup, garlic, basil and tomatoes for 5
minutes
Add the cheese, melt while stirring, season to taste, serve
Notes:
Serve on pasta of your choice, on grilled meats, as a dip, etc.
This is only an example of ketchup being a base for an all-purpose
sauce, the ingredients can vary according to taste or availability
Ingredients:
8 Quarts Tomatoes
6 Onions, sliced
2 Red peppers ,seeds and membrane removed
3/4 C. Brown sugar
1 T. Allspice
1 T. Cloves
1 T. Mace
1 T. Celery seed
1 T. Peppercorns
2 Inch stick of cinnamon
1 t. Dry mustard
1/2 Clove garlic
Bay leaf
2 C. Cider vinegar
Cayenne
Coarse salt
Procedure:
Wash and chopped the tomatoes
In a large, thick bottomed pot, simmer the tomatoes, onion and red
pepper until soft
Rub the above tomato mixture through a food mill
Add the sugar
Tie the next 9 ingreds. into a cheese cloth bag to form a spice bag
and place it into the tomato mixture
Boil all the above ingreds. quickly, stirring often. Combine to stir
until the quantity is reduced by one-half. Remove the spice bag
Add the vinegar and season to taste
Simmer for 10 minutes longer
Notes:
This condiment originated in Malaya and its name derives from the
native word for "taste".
No other food so familiar to North America seems to have so many
variations in spelling
The spices can be varied
After the final 10 minute simmering, you can pour at once into sterile
jars, leaving 1/8 inch headroom. Seal and process for 15 minutes in a
hot-water bath, for half-pints
