Ingredients:
6 Bacon slices
12 Large fresh scallops
Toothpicks
Procedure:
Cut bacon in half to form 12 half slices
Roll each scallop with a half piece of bacon and then slide a
toothpick threw it, to hold in place
Broil under a broiler or cook in a preheated 425°F oven, until the
bacon is cook to the desired level of doneness
Notes:
Freeze the bacon wrapped scallop before cooking them, so that the
bacon cooks before the scallop is over done. Or precook the bacon half
way before wrapping the scallop
Do not over cook the scallop
Can be served with lemon wedges, sprigs of fresh herbs, other
garnishes and or cocktail sauce
Mushroom Caps Stuffed with Crab:
Ingredients:
12 Button mushroom caps
4 oz. Crab meat
1 T. Fresh basil, chopped
1 T. Extra virgin olive oil
Juice of 1 lemon
Salt
Fresh ground black pepper
Procedure:
Wash mushroom caps off with cold water, then dry with a towel
Mix the crab, basil, oil and lemon together and then season to taste
Spoon or stuff the crab mixture into the mushroom caps
Bake in a preheated 375°F oven until hot and cooked through out
Serve and garnish
Notes:
Do not over cook the mushrooms
Garnish with sprigs of fresh basil, lemons wedges, onion curls, etc.
Other seafoods can be used such as lobster, fish, etc
Ingredients:
1 Lbs. Lean ground beef
1 Shallot, fine diced
1 Med. size dill pickle, fine diced
2 T. Fresh dill, chopped
Worcestershire sauce
Salt
Fresh ground black pepper
Procedure:
Mix all of the ingredients together, seasoning to taste
Form portion size balls, (about 1 oz. each) place them on a baking
sheet and bake in a preheated 350°F oven until cooked
Notes:
Serve with toothpicks
Serve with a dill sauce (brown or white sauce and fresh dill)
Ingredients:
Shrimp, peeled, deveined
Lettuce and other greens
Ice cubes, crushed
1 Part Horseradish TO
3 Parts Tomatoes, crushed
Worcestershire sauce
Lemon juice
Procedure:
Briefly cook shrimp in simmering water until done, then cool in ice
water
In the right size bowl for the number of shrimp cooked place the
lettuce, ice and put the shrimp around the rim
In a smaller bowl mix the horseradish, tomatoes, worcestershire and
lemon juice, then place this in the center of the other bowl
Notes:
Katchup can be used in place of the crushed tomatoes
Amount of shrimp can vary according to amount of people
Garnish with lemons and or clean, washed seaweed
Ingredients:
Small puff pastry shells, tops cut off
6 oz. Chicken, cooked, diced
4 oz. Heavy cream
2 oz. Parmesan cheese
Salt
White pepper
Procedure:
Simmer the cream, cheese and seasonings until semi-thick
Remove from heat, add chicken and spoon onto the pastry cases,
putting the tops back on at the end
Reheat in a 300°F oven until hot at serving time
Notes:
Puff pastry shells can be purchased premade
Garnish with fresh herbs, etc.
